Peppermint Biscotti

FANTASTIC! I made these last X-mas and packaged them up in a mini baskets with mugs, chocolate, and coffee beans. It was a huge hit. I dipped the biscotti in white chocolate and then sprinkled with the peppermint candy. The white chocolate for this recipe is a MUST. Amazing and my friends keep nagging me to make it again...but I think I'll make them wait until Dec. ;)

Fiery Fish Tacos with Crunchy Corn Salsa

Easy and delish. The corn salsa was a hit..ppl were eating just the salsa and I almost ran out before the fish was grilled. I made the corn salsa the night before. Make sure you don't just juice but actually ZEST the limes. It gives the salsa an extra refreshing and tangy kick!

Sangria! Sangria!

Pretty good but still wish it were stronger. :) I used: 1.) 2 buck chuck - merlot 2.) Peach Shnapps instead of triple sec 3.) Cut the sugar out completely 4.) Added pears, apples, strawberries 5.) Had some 7-up on hand for guests 6.) Let the juice and fruit sit overnight Next time I'll add more brandy and peach schnapps. yum!

Slammin' Salmon

Very delcious and easy to make. I served this along with roasted garlic mashed potatoes and some asparagus and butternut squash. Yum! My bf loved this meal. I will definitely make this again and again and again!

Grandmother's Buttermilk Cornbread

Delicious golden cornbread! Just made these for a big family BBQ that my sister and I hosted. Easy to make and not too sweet. I followed the recipe exactly but the bread was still a lil dry. I think I'll add a lil oil next time. Using a cast iron skillet was defnitely a must!

New Orleans Chocolate Bourbon Pecan Pie

Pretty good pie recipe. I'm not a huge fan of pecan pies but my family enjoyed it (made it for xmas dinner). I followed other's suggestions and: 1.) added 1-2 more tbs of bourbon (Maker's Mark) and 2.) sprinkled semi-sweet Ghiradelli chips on the crust not mix in the batter. I would also definitely make your crust and don't buy pre-made... it does make a difference. Pie turned out wonderful.

Balsamic-Glazed Salmon Fillets

This recipes was EASY and really really good. My mom hates salmon but actually enjoyed this one! The honey definitely adds a subtle sweetness to this dish. I also recommend doubling up on the sauce...

Roasted Garlic Mashed Potatoes

Excellent. I also added some Parmesean cheese and some garlic salt. The roasted garlic is the key as it adds a delicious garlic flavor without overwhelming. I used margarine and non-fat half and half.

Mini Apricot Cheesecakes

Excellent! I made these for my family and friends for Easter and they said this was possibly better than a restaurant's cheesecake! I reduced the sugar to 1/2 cup. And Instead of Apricot topping I topped with a berry preserve and fresh rasberries and drizzled with white chocolate. For another batch I topped with heavy cream, and drizzled with dark chocolate and carmel. Then I topped THAT with slivered almonds lightly toasted in butter and then shaved some extra dark chocolate at the end before serving. For the crust, I mixed melted butter, graham cracker crust and a little brown sugar. Obviously these changes extends the cook/prep time, but the results are FABULOUS! I've been commishioned to make 50 for a grand opening for a friend!

Miniature Cheesecakes

This is so easy and they turn out so cute! I might mix the cheesecake mix in a blender or something next time because the consistency wasn't the smoothest when I did it myself. I added only a dash of nutmeg as well and reduced the sugar. I used various fruit preserve and fresh fruit as toppings as well as a dallop of whipped cream and finely chopped nuts or sliced and toasted almonds drizzled with dark chocolate and white chocolate. You can be really creative with these. I usually box 4 beutifully presented cheesecakes into a fancy little box to give to friends on birthdays and they love it!

Shrimp Fettuccine Alfredo

Great creamy alfredo. I would highly suggest to add the shrimp near the end of cooking the sauce as the shrimp was very overcooked by the time the sauce thickened.

Jamie's Cranberry Spinach Salad

Hands down one of the best salads I've had..EVER! I served this at Thanksgiving and my guests requested seconds and thirds! I also used less oil, sugar, cider vingar, etc. You should def. toast the almonds in butter as it really brings out the flavor. Toasted seasme seeds were also a must for the dressing. Do not toss the salad with the dressing until the last minute in order to keep the spinach fresh. Thanks Jaime!

Ali's Amazing Bruschetta

Easy and Delish! I served this with some pasta at a Christmas party that I hosted and it was a huge hit. I took the suggestions of many and rubbed garlic cloves on the bread slices, brushed them with butter and then toasted lightly for a few minutes before placing the tomato mix on the bread. The tomato mix also included balsamc vinegar, salt, pepper, minced galic and capers. I also reduced the amount of onions. I topped the tomato mix with finely shredded mozarella before I toasted the bread for a second time. Mmm Mmmm Mmmm!
