About this Cook
The thought of cooking terrified me years ago. Recipes were intimidating and I never wanted to try. Now, the meals I eat are 90% homecooked. My focus now is to use fresh, healthy & organic ingredients to cook delicious, healthy and hearty meals for me and my loved ones. If you believe in the concept that you are what you eat then you are concious and careful with everything you put in your precious body. Happy Cooking!

Happy Roast Chicken
Never ever will I buy the pre-made rotisserie chicken again! This was my 1st time roasting a whole chicken so I was nervous but it turned out WONDERFULLY tasty and juicy. I added some thyme springs into cavity along with some quartered onions. I used coarse dijon mustard for the rub. I will try to salt & pepper under the skin and in cavity next time. Cooking time was about 20 min longer for me and I broiled for a teeny tiny bit at the end. Skin was crisp and the chicken was falling off the bone. Recipe is a major keeper.

Bob's Awesome Lasagna
Fantastic. This was my 1st time making lasagna and my bf said it was the best lasagna he's ever had! Thanks to the suggestions of others the dish couldn't have turned out any better. My adjustments. 1.) Whole wheat noodles, 2.) Sauteed fresh chopped garlic with onion before adding beef, added oregano and italian seasoning 3.) Added chopped/drained spinich to meat /sauce mixture 4.) Cheese mix: used 1/2 ricotta, 1/2 cottage cheese, 1lb mozzarella mixed all together with 1 egg. 5.) Baked covered with foil for 50 min, uncovered for 10 then broiled for a few minutes until cheese browned. (Used 2 (24.5 oz) jars Classico Mushroom & Olive tomato sauce..perfect b/c it had some mushroom in it!) Absolutely delicious!

Honey Mustard Dressing II
Excellent. I sub'd for a healthier dressing and was blown away by the result! I used coarse grain dijon mustard & nonfat plain greek yogurt. I've served the dressing on the side with herb crusted chicken & fish on separate occasions. So good!
