Easy Oatmeal Muffins

I made these muffins twice today. I had planned to use some of the other reviewers suggestions the first time around, but I was visiting with my daughter and I completely forgot to make the changes. They were very bland made as directe; I threw them away. The second time I equal parts brown sugar, white sugar, regular milk and butter milk and quick cooking oats and old fashioned oats. I also added vanilla, cinnamon and pumpkin pie spice. I divided the batter and Added choc. chips to some, dried cranberries to some and left some plain. Thanks everyone for your great ideas they are wonderful! I had to threaten my family to stay out of them as they are for Christmas morning breakfast tomorrow!

Quick Italian Vegetable Soup

This was very tastey. I think everyone makes soup recipes there own, these are the changes I made. I added pressed garlic for the last 2-3 min of the onion, celery, carrot mixture. It still needed something at the end, so I added a roasted garlic and red pepper seasoning. This was great by itself, but when you add the shredded parmesan it takes it over the top!

Out of this World Turkey Brine

We loved this! I followed the recipe and it was perfect. My 13yr old daughter who doesn't even like turkey couldn't stop praising it. I took note from others though, about the gravy. The drippings were very salty and you could taste the w. sauce. I boiled the neck and the giblets and used that to make my gravy. I will always make my turkey this way now.

Rhubarb Strawberry Crunch

Absolutely perfect! I sliced my strawberries and combined them w frozen rhubarb the night before. I think sitting overnight made more of the juices come out of the fruit. Because of this, I added 2 more table spoons of flour. I divided the mixture between 8 ramekins and topped it w the crunch mixture. (I did have some extra) Served w vanilla ice cream. I wish I was tech savvy, I would have taken a pic- they were soooo CUTE!

Wassail Punch

Cha Cha's White Chicken Chili

We loved this. I made it in the crock pot by pouring all of the ingredients (except one can of the beans which I pureed as suggested by another member)over a frozen chicken breast and cooking it on low for about 5 hours. Then I removed it, shredded it and added it back to the chili. Next time I will only use one can of broth. I think cooking it in the crock pot rendered all the juices from the chicken and made it too thin. I also added a can of corn and 1/2 cup fat free half and half to it and served it with corn bread.

Chile Garlic BBQ Salmon

Soooo good. I didn't marinate it like some suggested, but I will next time. I wraped individual fillets in foil and made them that way. I saved the dripping and marinade from each pouch to use as a dipping sauce. Mmmmm I am hungry just thikning about it.

Super Easy Fruit Dip

Oh my goodness! Who new such a yummy dip could be so simple!? I needed a recipe for a healthy fruit dip for my first graders Valentine's Day party. I followed others' advice and used dbl the amount of yogurt. I also used light whipped topping and fat free vanilla yogurt. (vanilla was all I had) It was SO yummy. I can't wait to try it with other flavors of yogurt. I'm going to make this and keep it on hand.

P.J.'s Fresh Corn Salad

I tried this recipe because I wanted to re-create a side dish I had at a popular restraunt. I used thawed frozen corn , regular and white, one Cup each. I steamed zuchinni in the microwave until it was crisp tender. I added the juice of 1/2 lime and salt and pepper. I know it isn't the smae as the original recipe, but it was tastey.

Fabulous Fried Cabbage

I made the slow cooked corned beef from this sight and used the broth from it instead of the broth called for in this recipe. Also no butter because of the fat in the broth. Followed the rest of the recipe and we really liked it.

Sweet Party Mix

Made this twice the first time I made it in one pan. You really do need 2 pans. It makes a huge difference.Followed recipe, but added pretzles. So Easy and good!!

Honey Butter Yule Ham

We loved this. The only thing I will do differently next time is make sure to use butter with no salt. Our ham was a little to salty, but you could really taste the honey, it was great!

Quick and Easy Monkey Bread

I fixed this this morning for Christmas Breakfast and it was great. I did make a couple of unintentional changes. I was so tierd last night I didn't pay attention to the ammount of rolls called for and I used a 3lb bag. Because of this it wasn't done when I removed it from the oven and it went everywhere when I turned it onto the platter... so I dumped it in a 9x13 dish and popped it back in the oven. We loved it!

Spiced Pickled Beets

I gave this 5 stars even though I made some changes. It is such a great base recipe. After reading the reviews, I added 1/4t cinnamon, doubled the "pickling juice" ingredients, and refrigerated it over night. It was awesome!

Six Can Chicken Tortilla Soup

It took me a while to get there, but this is definitely a Five Star. This is what I did after reading several reviews. I threw everything in the crock pot making these changes: I used one frozen chicken breast, a can of rotell for the tomatoes and one can of reduced fat cream of chicken soup. I cooked it on low for 4 hrs. It was really really good, but to spicey for my little ones. So... I ended up doubling the recipe adding a can of regular tomatoes instead of the rotell. It is so good! I served it with crushed tortilla chips and shredded cheese. Bonus-Now I have enough to freeze for another time!

Spaghetti Sauce II

We loved this sauce. I used diced fire roasted tomatoes instead of whole because that is what we like and I didn't add the meat. I cooked it on low in the slow cooker over night and we had it for lunch after church on Sunday. I had to add some chicken stock to thin it out, but that is probably due to the long cooking time. Next time I will add less red pepper, but other than that I will make it exactly the same actually, I think I will double it and freeze the leftovers.
