D's Famous Salsa

A really great basic recipe that you can adjust to your personal preference. I used one can reg stewed tomatoes, one mexican stewed tom. and added green onion. It was a big hit.

Meatloaf with Fried Onions and Ranch Seasoning

I made this recipe fully expecting at least part of my family to turn their noses up at it. However even my SUPER PICKY 8yr old son wolfed it down. I can't believe everyone liked it (4 kids 2 adults!) It was a little crumbly, so I think I may alter it a little next time. I should also note that I mixed this up early in the day and just popped it in the oven when I got home from work. One last thing, Don't forget the foil, I did and it took much longer to cook. This is a keeper!

Slow Cooker Sweet and Tangy Chicken

I liked the flavor of the recipe, but I think the cooking time was too long. The chicken was dry. Next time I will probably only leave it in the crock pot for a couple hrs.

Out of this World Turkey Brine

We loved this! I followed the recipe and it was perfect. My 13yr old daughter who doesn't even like turkey couldn't stop praising it. I took note from others though, about the gravy. The drippings were very salty and you could taste the w. sauce. I boiled the neck and the giblets and used that to make my gravy. I will always make my turkey this way now.

Cha Cha's White Chicken Chili

We loved this. I made it in the crock pot by pouring all of the ingredients (except one can of the beans which I pureed as suggested by another member)over a frozen chicken breast and cooking it on low for about 5 hours. Then I removed it, shredded it and added it back to the chili. Next time I will only use one can of broth. I think cooking it in the crock pot rendered all the juices from the chicken and made it too thin. I also added a can of corn and 1/2 cup fat free half and half to it and served it with corn bread.

Easy Oatmeal Muffins

I made these muffins twice today. I had planned to use some of the other reviewers suggestions the first time around, but I was visiting with my daughter and I completely forgot to make the changes. They were very bland made as directe; I threw them away. The second time I equal parts brown sugar, white sugar, regular milk and butter milk and quick cooking oats and old fashioned oats. I also added vanilla, cinnamon and pumpkin pie spice. I divided the batter and Added choc. chips to some, dried cranberries to some and left some plain. Thanks everyone for your great ideas they are wonderful! I had to threaten my family to stay out of them as they are for Christmas morning breakfast tomorrow!

Wake-Up Casserole

I'm giving this 4 stars because I think it has a lot of potential. We thought it was a little bland. I will definitley make it again, but I will add some things. Possibly: onions, onion powder, garlic, green chilies etc. It was very easy to put together, I used tator tots and turkey sausage.

Low Fat Buttermilk Ranch Dressing

We loved this. The flavor is great. Mine came out a little to thick, but I think that is a matter of preference. I just thinned it a little w/ 1 or 2 tablespoons cider vinegar.

Hot Mexican Spinach Dip

I followed the recipe, but I used light options like 2% cheese, light cream cheese, and fat free evap. milk. We all really liked it(gone in a flash!!), but I think I will use hot salsa next time. All the other ingredients dilutes the heat of the salsa. I also wonder what this would be like using tomatilla salsa. I might try that some time. I will definitely make this again.

P.J.'s Fresh Corn Salad

I tried this recipe because I wanted to re-create a side dish I had at a popular restraunt. I used thawed frozen corn , regular and white, one Cup each. I steamed zuchinni in the microwave until it was crisp tender. I added the juice of 1/2 lime and salt and pepper. I know it isn't the smae as the original recipe, but it was tastey.

Orange Rice Medley

I've tried making this recipe twice. It was ok, but just not what I'm looking for. I want something with a little more punch. It has also turned out sticky both times I made it. I think it has great potential though w/ cosiderable tweakng.

Low-Fat Blueberry Bran Muffins

Followed other reviewers suggestions. Used Brown Sugar Splenda, Wheat Flour only, All Bran, and egg whites. I made them thinking I would be the only one who liked them. I was going to freeze them for quick breakfasts. Well.... there are only 2 left. My teenager said they were "rediculous"---apparetly that means 'good' since she ate three. The rest of the family loved them too. I didn't even tell them that they were a "healthy Chioce!".

Lemon Garlic Tilapia

I followed the recipe, but the fish was very bland. I may try it again, but use more of the lemon, butter,& garlic. I think that is soaked on through and out the fish as it baked. I may add it in the middle of the cooking time. I also didn't cook it 30 min. More like 10 and I like my fish a little more done than some.

Chile Garlic BBQ Salmon

Soooo good. I didn't marinate it like some suggested, but I will next time. I wraped individual fillets in foil and made them that way. I saved the dripping and marinade from each pouch to use as a dipping sauce. Mmmmm I am hungry just thikning about it.

Super Easy Fruit Dip

Oh my goodness! Who new such a yummy dip could be so simple!? I needed a recipe for a healthy fruit dip for my first graders Valentine's Day party. I followed others' advice and used dbl the amount of yogurt. I also used light whipped topping and fat free vanilla yogurt. (vanilla was all I had) It was SO yummy. I can't wait to try it with other flavors of yogurt. I'm going to make this and keep it on hand.

Oriental Hot 'n' Sour Soup

Not really like soup I've had in Chinese places. I only gave it 3 stars because I added so much extra stuff to bring it along. I added cooking sherry, soy sauce, bean sprouts and 1t chili paste.
