Coffee Date Bread

Very good. I made it vegan by using earth balance spread and 1/4 cup applesauce + 1/2 tsp extra baking soda in place of the butter and egg. I also used date sugar (ground dehydrated dates), whole wheat flour, and stovetop-brewed "cowboy" coffee with great results.

Grilled Portobello Mushrooms

Fantastically easy and artful vegan entree. Served as an accompaniment to a salad of grilled romaine (used the leftover marinade as salad dressing).

Quinoa and Black Beans

I cannot believe how many people are serving this an accompaniment to meat! Quinoa is one of the few COMPLETE proteins found in nature! Why not take this delicious opportunity to enjoy a meatless meal? Just a thought. The recipe itself is good, but could use a squeeze of lime and maybe 1/4-1/3 cup of diced tomatoes. It could have used the extra liquid.

Banana Crumb Muffins

I thought these were sickly oversweet. So sweet they left me gasping for water afterwards (everyone in my family agreed), and I didn't even use all of the topping. The muffin's interior, however, was delightfully moist, so I cut off the tops and we just ate the insides.

Zucchini-Chocolate Chip Muffins

I, like another reviewer, made these vegan by using commercial egg replacer (Ener-G brand) and soy milk. I also used half whole wheat flour and half all purpose; half raw turbinado sugar and half organic brown sugar; and half 1/2 almond extract and half vanilla. I also omitted the chocolate chips entirely and added more walnuts, as I wanted the flavor of the zucchini to come through--chocolate would have overwhelmed it. They rose perfectly (sometimes an issue with vegan baked goods) and were quite good.

Easy Fruit Cobbler

Just scrumptious and almost too easy. I made this with 2 cups of fresh pitted cherries (the pitting being the most laborious part of the whole process), raw (turbinado) sugar, half smart balance spread and half butter. The raw sugar gave it a nice molasses-flavored chewy "crust" and the bit of butter lurking at the bottom was just fabulous. Can't wait to make it again, with apricots!
