Oatmeal Chocolate Chip Cake

We thoroughly enjoy it. Thanks to Luanne sharing it and to you & your husband for his military service. I read the reviews before I start most recipes on the site to see if they match my tastes & preferences. This one is another for my Church Fellowship Hour folder! Only changes: ** Whole wheat flour for the all-purpose (really kicks up your fiber %) ** Generous Tablespoon(s) of cocoa powder ** Generous 'measure' of chocolate chips ** ** Fresh Southern Pecans instead of walnuts (not an option for all but when you live in NC, it's silly not to take advantage of them) ** or what I just tried last w/e 'sliced almonds' w/1 tsp. of pure almond - oh my stars; what a flavor! ** Butter only; I can't say hydrogenated so I certainly don't eat it. (or do the applesauce thing (1 Cup + 1/2 stick butter). ** Bakes VERY WELL IN silicone pans!! Don't know why the previous reviewer said it wasn't moist because it is! ** When done & cooled; dust with confectionary sugar & drizzle with chocolate syrup. EVERYONE! will think you spent $$$$$ at a fancy bakery for something with every ingredient you can pronounce without a college degree!! I love it and make it in the 'oven season'.

Spinach Cheese Pie

I defrosted approx. 12 oz. frozen chopped spinach and drained it, added 1 TSP. minced garlic & used 1 15 oz. container of Ricotta. Was short on time and nuked it on power level used for eggs to get it started and then finished in oven. Worked just fine and will add diff. meat & veg. ingredients suggested by other reviewers the next time. I will definitely try this as a lasagna layer. A keeper! and thank you to CANDLELADY9AH

Peanut Butter Chip Chocolate Cookies

Did these for our GRIN Girl's Night In bunch; "Girls Raised In the NORTH" with one member who owns a local "casual fine dining restaurant".No pressure here when it's your turn to contribute! Didn't have the peanut butter chips so I subbed s-sw chocolate chips in one batch, walnuts & s-sw chips in another and coconut & s-sw chips in another. Whew & Thanks ... I'm safe for my dessert contribution.

Quick Hoppin' John Soup

It's that time of the year down here and this recipe is on my stove to be ready for Tuesday. Match it with the Kickin' Collard Greens SUBMITTED BY: Ken Adams in AllRecipes and some cornbread and NO ONE will know you're not from down here (until you say 'Thank You').

Shrimp Scampi Bake

As someone who has managed to avoid the kitchen most of my adult life (but now a 7/2006 newlywed), this one is a MUST in your recipe collection. I was even brave (inspired) enough to substitute a Cherry-Mustard (to taste) instead of the typical Dijon. Search for any flavored mustard out there and to your taste.

Mini Pumpkin Muffins with Orange Drizzle

As someone who has managed to avoid the kitchen most of my adult life (but now a newlywed), this one is a MUST in your recipe collection. I was even brave (inspired) enough to substitute a Powdered Sugar with Ground Ginger (to taste) to dust the tops instead of the Orange Drizzle. To all, I am a star at our Church Fellowship hour!
