Simple White Cake

Reviewed: Jan. 30, 2010
NOT GOOD!! This is not a white cake, has too coarse a texture, and a very odd flavor. Plus it only made one very thin layer.

Almond Custard Filling

Reviewed: Oct. 29, 2009
Really good flavor but was not thick enough to be used between cake layers. Next time I'll add more cornstarch.

Turkey Pot Pie II

Reviewed: Oct. 29, 2009
I have made this recipe twice and it's the BEST! I substituted chicken for the turkey, used fresh carrots, potatoes and green beans, added an extra can of cream of chicken soup and some poultry seasonings. My family LOVES it! THANKS!!

Oven Baked Jambalaya

Reviewed: Jun. 29, 2009
We made this for a "Jazz & Jambalaya" youth fundraising event for our church that fed 200 people and it turned out great! We completely followed the recipe except had to prepare the rice separate from the jambalaya because we lacked oven space. We combined the two before it was served and everyone loved it!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Feb. 10, 2009
Tenderloin should not be cooked in a crock pot.. and I should have known better. The combination of wine, soy sauce and onion soup mix was interesting and made the pork taste sour. Perhaps browning in a skillet before putting in the crock pot would improve the flavor and its appearance. If you do attempt this recipe give yourself a few minutes at the end to make a sauce from the crock pot liquids.

Real Homemade Tamales

Reviewed: Jan. 2, 2009
Excellent recipe but I suggest steaming for three hours. The masa should pull away from the hojas(corn husks) when done. I wrap each folded tamale in a large sheet of "sandwich paper" (Smart & Final), similar to parchment but thinner and it keeps the hojas (corn husks) from opening as you stack them in the steamer. I make 50 at a time so it's better if you have a helper.

Turkey Pot Pie I

Reviewed: Jan. 2, 2009
This has great flavor but I think needed more sauce. I used refrigerated roll-out pie crusts which made it very easy to make. I had leftover roasted chicken which I substituted for the turkey and added poultry seasoning for extra flavor. The only thing I would do different is to not combine the meat with the flour, butter, milk mixture as it completely shredded, and perhaps double that mixture. Next time I will fold the meat in at the end. Always use fresh vegetables for better texture and flavor.

Blackberry Cobbler II

Reviewed: Aug. 20, 2008
This is an excellent cobbler recipe. As suggested in other reviews, I added a little cinnamon to the berries and to the topping and used one and a half times the recipe for the topping. Having used thawed berries I added a bit more cornstarch. Make it, you will be glad you did! Thanks, AmandaLyneal.

To Die For Blueberry Muffins

Reviewed: Aug. 4, 2008
Excellent muffins!!!! My husband, daughter, father-in-law and I loved them. I doubled the recipe and added about 1/4 cup more blueberries than recipe called for. For the topping I used room temperature butter but didn't use about a quarter of the topping as it seemed like too much.

Vanilla Ice Cream III

Reviewed: Aug. 1, 2008
This recipe is very easy and the flavor is good, but it's very icy... like ice milk you could buy years ago. I used 1% milk, perhaps it would have been better using whole milk.

Artichoke Chicken

Reviewed: May 20, 2008
This chicken was just okay. I pounded the chicken a little to tenderize and cook quicker but it was no where close to being done in 30 minutes. The flavor from the artichoke mix was good but did not penetrate the chicken, leaving it a bit dry tasting. Would not make again.

Tantalizingly Tangy Meatloaf

Reviewed: May 7, 2008
I didn't change anything about the recipe except I doubled it, shaped the meat into a loaf and baked in a rectangular baking dish. Our whole family thought the meatloaf was amazing. My husband made meatloaf sandwiches for the following two days and raved about it how good it was. The glaze was the perfect amount of sweetness. I am so glad to have finally found a meatloaf recipe that I like. I think this would also make a good recipe for a meatball appetizer dish.

Mom's Baked Macaroni and Cheese

Reviewed: Nov. 4, 2007
This is the easiest and best recipe for macaroni and cheese. I made it for our Youth Group Halloween Party and it was a big hit with the kids and their parents. I especially like how simple the recipe is. I too added an extra can of Cheddar cheese soup as others suggested and for extra flavor I added fresh finely ground pepper and paprika. I plan on making next week for our Youth Group Potluck!

Strawberry Pie II

Reviewed: Jun. 19, 2007
My family really liked this pie. I used the ingredient's quantities as listed on the recipe and it was perfect. The strawberries were large so I cut them in half. I also used 3/4 of strawberries in the shell and the remainder for the sauce. After the sauce had cooked I put it in a food processor till it was silky smooth. I carefully spooned it over the strawberries in the shell so as not to overdo it, being sure to get it into all the crevices.

Chocolate Truffles

Reviewed: Dec. 24, 2006
These truffles were extremely quick and easy to make. I made a double batch and took it to Advent Night at our church. It made for a fun activity as people were able to shape into balls and roll their truffles in their choice of toppings. I used 1/2 semi-sweet and 1/2 dark chocolate for a deeper flavor.
