Amazing Muffin Cups
Everyone loved these!! I didn't have the peppers or onions (which I don't think would have gone over well with my little ones anyway), so I added 1 tsp dried onion flakes and a sprinkle of California garlic salt to the eggs. Also, I used freshly shredded cheddar and ground browned sausage instead of the links because that's what I had. Still turned out brilliantly. I love it even more that this is such a versatile recipe!

Buttermilk Pancakes II
Everyone loved this recipe. My husband (53yo) gave the highest compliment (which he doesn't give easily), that these were the best pancakes he's ever had. I don't think I've ever heard him say this about anything. I will say that I used White Lily self-rising flour and omitted the baking powder and salt. If you're in the south and it is available to you, White Lily makes a huge difference with baked goods. Not sure how it is, but there really is a difference. America's Test Kitchens seems to think so, too, which convinced me. Oh, and you must use buttermilk. Regular milk will make it too watery. If you don't have buttermilk, make a different recipe.

Gramma's Date Squares
LOVED this recipe, and so did my whole family. Not sure what kind of dates I used, as they were left here by a party guest and I didn't want them to go to waste (enter finding this recipe). I did bake the crust part for 15 minutes before adding the filling and topping as other reviewers suggested (thanks guys!), and I used a whole cup of semi-melted butter, but think it would have done fine with only 3/4 cup butter, and without the sugar added to the dates. They were very sticky and sweet as is. To quote Rachel Ray: YUM-O
