Tantalizingly Tangy Meatloaf

FABULOUS! My husband is not a fan of meatloaf, and I finally found a meatloaf he likes! To add more nutrition, I add a shredded zucchini to the meat. A great way to sneak in some veggies without anyone two boys never knew! Pineapple preserves are impossible to find. I use crushed pineapple instead. I just divide the can of pineapple into portion sizes, put them into baggies and then freeze them until I make this recipe again.

Grilled Marinated Shrimp

WOW! This recipe is top notch! I think it is one of new favorites. I followed the recipe as written with only one minor change...I decreased the tabasco to only 4 tsp. This made the heat perfect especially for my kids. I marinated the shrimp in only 1/2 of the sauce and saved the rest for serving with angel hair pasta. Put a little sauce on the pasta and toss. A little sauce goes a long way but it adds LOTS of delicious flavor. I then topped the pasta with the shrimp. FANTASTIC!!

Banana Banana Bread

An excellent recipe for Banana Bread! I save up bananas in the freezer until I have enough...then I just take them out, let them defrost, and then squeeze the banana right out of the peel. The recipe is my son's favorite!

Farm Fresh Zucchini Cranberry Nut Muffins

Great recipe! Delicious muffins with a wonderful balance of flavors! I added 1/4 tsp of cinnamon, used butter instead of margarine, and I think I will add a few more cranberries next time (which will probably be later today!). I recommend using fresh cranberries--they help make the muffins extra special. Definitely try this recipe, you won't be disappointed!

Jan's Pretzel Dogs

LOVE these! The pretzel part is top notch and taste just like the hot pretzels you can buy. You must use the parchment sticking. I baked them at 425 which helped them not be so brown.
