Harvest Salad

Reviewed: Nov. 11, 2014
Enjoyed the salad, but used 1/2 romaine and 1/2 spinach, added mini fall colored tomatoes instead of sliced tomatoes, a thinly sliced Granny Smith apple, candied pecans instead of the walnuts and used 1/2 goat and 1/2 blue cheeses. This was beautiful and wonderful. The dressing was absolutely TERRIBLE. It had so much oil, that we had to drain off as much as we could. Then, DOUBLED all other ingredients. Still not great, so stirred in 2 T of fig preserves I had on hand. MUCH better, but still glad I'd also made my favorite balsamic dressing and served both on the side.no drizzling.

Beef Pot Roast

Reviewed: Dec. 21, 2013
This really is almost perfect! I made these changes: 1. I dusted the roast with flour, a little sea salt and fresh ground pepper before browning. 2. After removing roast from pan for veggies, I also added red potatoes, mushrooms, celery and carrots with the onion and garlic. Plus, I added 3 T. of A1 Steak Sauce and 1/4 cup cooking Sherry. (If you're against cooking sherry use the same amount of apple cider). 3. I cooked in the cast lidded roasting pan stovetop for about 15 minutes before returning roast to pan. 4. I cooked at 350 Convection Oven for 30 minutes, took out and stirred while reducing to 300 (Convection) for 1.5 hours. Everything else was exactly the same, DELICIOUS!

Bacon Roasted Chicken

Reviewed: Mar. 20, 2011
This is really a good chicken, but it needed more spices. Also, I omitted the salt altogether and used low sodium chicken broth. That way, I could add veggies to bake with the chicken and avoid the saltiness from my first attempt at this recipe. My changes made this 'good' chicken a GREAT complete meal. Search for my adapted recipe on this site to see my changes (:

Veggie Cabbage "diet" Soup

Reviewed: Dec. 18, 2010
This is really delicious... Honestly, even if you're not on a diet make this as a basic soup! Add chicken or beef, but start here!

Slow Cooker Creamed Corn

Reviewed: Dec. 25, 2009
The Cream flavor of this is delicious, however... we found the ratio of cream to corn way to heavy. Our family for Christmas is very large, so we were doubling the recipe. Luckily, I had plenty of bags of frozen corn in the freezer. To get the correct cream/corn ratio it took THREE packages of corn to the listed other ingredients...THEN, it was perfect!

Sweet Potato Casserole IV

Reviewed: Dec. 19, 2009
Very good! I added 1 t. of nutmeg and 1 t. of cin, for a little more flavor. I increased milk to 1/2 C, for extra creaminess. Also, I really like the 'crunch' on top, so I increased those ingredients by 50%. This was a Thanksgiving hit, and requested for Christmas! Yes!

Good. Great the next time, with 3 eggs instead of 4 and 30 ounces of Libby's pumbkin pie filling instead of the puree i also suggest you use Cream Cheese Frosting II recipe instead of this frosting version.

Zippy Baked Carrots Side Dish

Reviewed: Feb. 1, 2008
Good, but I'll keep looking for a great cooked carrot recipe. The bread crumbs added nothing but mush, throwing off the desired result!

Gramma B's Broccoli Casserole

Reviewed: Feb. 1, 2008
Good basic. I prefer cream of chicken soup to cream of mushroom, always. I also think the onion rings are extremely important for crunch, so I ran in a local restaurant and got an order of shoestring onion rings to top with! Yes! crunchy topping perfection. Even the kids enjoyed this one!

Brie Soup

Reviewed: Feb. 1, 2008
This is really a good cheese soup. Overlook the "expert" words and use your common sense on what to skim off, etc. A local restaurant makes this soup, so I looked here for a recipe. This was better when I omitted the carrots and pureed the mushrooms in a food processor the second time. If you've tried and enjoyed Brie Soup, don't bypass this recipe!

White Bean Chicken Chili

Reviewed: Feb. 1, 2008
I do think this is "the best" but made a few changes. I used 3 T minced garlic, I used the meat and juices of a cooked whole chicken. I chopped 2 tomatillas, instead of canned and cooked with the onion and garlic. I used one package of frozen sweet corn instead of corn on the cob, and added a can of black beans. Instead of the diced green peppers, I added a 7 ounce can of salsa verde. I also deleted the salt and pepper, because everyone has different tastes for these. Then, I added one whole jalapeno pepper, floating at the top for looks, and to satisfy my personal heat tastes! I also added everything to a slow cooker, after cooking the veggies, and let it cook on low for 8 hours. It was a huge hit to everyone. This is a keeper!

Zesty Slow Cooker Chicken Barbecue

Reviewed: Apr. 2, 2007
A HIT! I used 6 frozen boneless breasts, with no 'sauce' deviation. I was worried about the frozen when I left for work, but I got home to slow cooked, tender, juicy goodness. I planned potatoes and corn, but the whole family beat me home, so instead I toasted buns, and served with chips and pickles. Everyone LOVED this keeper recipe!

Ginger Salmon

Reviewed: Jan. 21, 2007
We love Salmon and I cook it all the time. I was excited to try a 'simple' new recipe. This one, however was boring. Wasting time on the fresh ginger, only to have bland salmon was disappointing. I started to settle for a 3 star rating, but 2 was the best I could give. Thanks, anyway.

Orange Roughy Parmesan

Reviewed: Jan. 13, 2007
This was delicious. I would have given it a 5 for taste, and ease of preparation. However, it took much longer to cook that 12-15 minutes (33), and I recommend using the tool on the page that allows you to change the number of servings. A serving of one seemed odd. But still... yummy. It's a keeper!!!

Bacon Wrapped Smokies

Pretty good... kids loved the flavor combination, salty/sweet. However, I had to practically burn these to get the bacon done enough. I'llmake a version of these again, but definitely not THIS recipe.
