Hudson's Baked Tilapia with Dill Sauce

5 stars for fish portion as best tilapia recipe we have tried. Came out perfect. I was afraid cajun would be too hot (I'm wimpy) so went light on it. Will use more next time as just flavorful. DH is not so much on the dill, so am working on using this sauce with a "tartar sauce" twist for his benefit. He tried eating the cooked lemon (middles) & actually they were good...who knew? Thanks so much for a great way to get a healthy meal in him. Served with Yukon gold mashed with shallots from this site & a healthy salad! Wonderful. You are the tilapia master!

Yukon Gold Mashed Potatoes with Roasted Shallots

Mixer is actually optional, if you'd like to make it easier! Just grated yukons on the second largest side of my old fashioned 4 sided grater, once dried. Tukons are so fluffy by the time you add the shallot mixture they seem mashed already & don't get "gummy" from the mixer. I cut up the skins that didn't grate & kept in for fiber(although I couldn't really see where the recipe has you take them off). I will try the shallots via saute until carmelized, as thinking you could cook potatoes the night before, leave in fridge in their jackets, grate them then nuke & add shallot mixture. (Have nuked cooked Yukons easily in past.) In this way it wouldn't take so long to get dinner on the table after a long day at work. I served with tilapia as DH needs potatoes with fish or chiken to call be satisfied. Does anyone know if fiber is as low as shown? Seems should be higher if skins left on? Truly a fabulous five & deserves more any time you can get potatoes in them without butter! Thank you ever so much!

Sugar-Free Bread Pudding with Whiskey Sauce

Great way to heat sauce without curdling egg is to put in small pot or bowl & place that in bowl of nuked hot water. Wanted sauce warm as says to serve pudding cold. Came out great with sour dough on hand. I would like slightly less sweet, but everyone else thought fabulous. Added cinnamon & nutmeg to milk & wisked it till mixed in thoroughly before adding milk to bread. Thanks Kathy!

Marinated Turkey Breast

Really nice & juicy! Doubled garlic (never too much in our house). Not big on cloves, as a spice, so used one, ground up in mortar & pestle, added to marinade & low sodium soy sauce. Started marinating night before. Great with veggie & Mary's Healthier Potatoes! Thanks Danielle for a recipe that makes healthy turkey tasty!

Mary's Healthier Potatoes

Having now tried Yukon Gold Mashed with Shallots recipe on this site, I apologize but have to jump ship. Changed my rating from 4 to 3 stars as for 1 extra gram of fat they are worlds better (a most solid 5). These are good & acceptable as healthier than most & don't need butter, but the other recipe just shines in comparison. Also, I doubt the difference in fiber counts one recipe to the other. I left skins on on the Yukons, so would have more anyway. Still impressed as DH hates cottage cheese, saw it & still liked it! Don't expect to be liked mashed, texture is different. With these I used about 1/4 cup onion, somehow forgot the garlic powder (think would use fresh anyway). Sprinkled very little less fat cheddar on top for color. To save time, cooked potatoes (whole) day before & grated next day (seemed would grate easier). The cayenne is key. Thanks Mary & sorry for changes.

Shrimp Lemon Pepper Linguini

Fabulous served with oven roasted asparagus (so no mayo needed) & a nice reisling! DH said invite company over! Semolina linquini (he got by accident) adds a tad more fiber, but still the texture he likes. Used 1.5 tsp+- pepper, (I'm wimpy) & precooked shrimp (I can tell, he can't). Second time added more fresh herbs - he voted for the lesser! Oh, time two used left over turkey breast...shrimp better, but great healthy way to use up leftovers. Great job...go skini!
