Homemade Melt-In-Your-Mouth Dark Chocolate (Paleo)
About this Cook
I love looking at and collecting recipes and have been doing so since I was a kid. Everytime I came across something someone made that I enjoyed I would ask for the recipe. I have a nice collection now and sometimes find it funny looking at a recipe that I thought was so good or intersting then and thinking now "I liked that?".
My favorite things to cook
Homemade pizza with fresh homemade dough. My next favorite is a pot of "Sunday" sauce and meatballs. I love how good my home smells while it's cooking and love dipping hunks of crusty bread into the sauce for a taste.
My favorite family cooking traditions
Stuffing for a holiday turkey. You just can't top homemade stuffing.
My cooking triumphs
Roasting a turkey. I was always intimidated. I didn't roast a turkey until several years ago and to my surprise it came out great. A girlfriend from work taught me. Made turkey soup with the leftovers and again surprised myself because it was delicious. I never knew homemade turkey soup could be so good.
My cooking tragedies
I've had enough but at least learned.

Zucchini 'Noodles'
No need to salt and boil your zucchini noodles. Simply cut into thin strips and cook in a skillet with a little butter or olive oil. I grate the garlic on a zester so it is super fine and distributes better through out the dish. I use salt and pepper to taste as well as the Parmesan cheese.

Frozen Banana Bites
Soooo Gooood!! Love frozen chocolate dipped bananas and love these bite sized treats even more with the addition of peanut butter and because they are bite sized. I used a bag of semisweet chocolate chips and did not add shortening once they were melted. I also sub'd the toffee chips out and used crushed peanuts instead. Peanut butter and banana chunks really need to be frozen well to make the next step of dipping in chocolate work well. I didn't measure the peanut butter either and just used my judgment when topping a banana slice. These little frozen bites of delight are rich, satisfying and delicious!

Roast Sticky Chicken-Rotisserie Style
Not much more to add than what's already been said ... this recipe makes the BEST chicken hands down!! Incredible, delicious and the only way I'll make a whole chicken for now on. Perfect blend of seasonings. 10Stars Sue Rogers!!
