Summer Squash Casserole with Nuts

Reviewed: Jul. 10, 2009
Delicious! I sauteed the onions first in a little of the butter (personal preference) and I didn't have a green pepper (didn't miss it). I think panko bread crumbs would be really good, maybe better than regular. I DID put in the sugar and I think if I had left it out, it might have changed the whole recipe.Used jack cheese a a few extra pecans and left the veggies kinda chunky. Both my husband and I loved this recipe. Thanks!

Egg Foo Yung with Mushroom Sauce

Reviewed: May 25, 2009
This had a good flavor but the eggs/batter ran all across the pan and made one giant pancake. Seems like it should have been thicker.

Beef Fajitas

Reviewed: May 17, 2009
My husband raved about this recipe. I sauted the traditional peppers and onions with the extra marinade and put them in the tortillas with the meat. I could taste the lemon, so I think next time I will cut down on the lemon just a bit. Thanks!

Curry-Coconut Shrimp

Ooh, this was great. It was so easy too! This will definitely be a keeper for quick and easy dinners. The only thing I might change is to increase the sauce ingredients a little to make it more saucy.

Guinness® Corned Beef

Reviewed: Mar. 28, 2009
This was really good. I recommend starting off with two cans of beer. I added more beer before putting in vegies to cook and it made the vegies somewhat bitter. Although, my hubby who doesn't care much for corned beef didn't think so. Also, rather than use the cheap cut, it is so worthwhile to use the flat cut!

Easy Chicken Tetrazzini

Reviewed: Jan. 4, 2009
I don't like leftover chicken in anything, but everything else in this recipe was so good it didn't matter. I added, like one reviewer suggested, panko breadcrumbs mixed with some shredded cheese and melted butter to the top 5 min. before taking it out. This recipe was really good.

Chili Mac Casserole

I'm not a fan of kidney beans so I subbed a can of mexican style chili beans and used ground turkey instead of beef (just cause I had it) This was a GREAT recipe. My husband also loved it.
