Penne with Eggplant

I couldn't find sundried tomato spread, so I used chopped fresh tomatoes. And I added chopped onions and a little bit of red wine. We loved it! Delicious, and since I doubled the recipe, I'm looking forward to the leftovers.

Quinoa Black Bean Burgers

I used a can of refried black beans to skip the smashing step, and left out the bell pepper, but these are delicious! I found it to be easy to make, and would be a great use of leftover/extra quinoa. The patties ended up being bigger than our buns, but that was fine with us. Thanks for the recipe!

Irish Lassie's Liver and Onions

This was my first time cooking liver, and I picked this recipe for guidance. I didn't have bell peppers, so it was just liver and onions. I had a small salad and biscuits with it. It was awesome! I was wondering if I would get the "bad smell" people talk about when cooking liver, but I never got it. It smelled great! Husband approved, and the biscuits were great for mopping up leftover gravy. I will definitely try this again sometime with the peppers.

Traditional Style Vegan Shepherd's Pie

I used real dairy (except milk, I used almond milk) and did my usual don't-really-measure-anything, and it still turned out amazing. While making it, I wondered if the "meat" mixture should have some kind of gravy-ness to it, but I didn't miss it at all when eating. In fact, I rather devoured my first serving.
