Broccoli, Rice, Cheese, and Chicken Casserole
Nice dish, the kids liked it. Anytime a recipe calls for "canned" chicken, I always use a rotisserie chicken, it just tastes 100 times better. I also only used cream of chicken soup. You also have to season this all. I used salt, pepper and garlic powder. I topped it with crushed up ritz crackers as well.

Pistachio Cream Cheese Fingers
I made these cookies for a cookie swap....big hit! I did as others had suggested, used an extra box of pistachio pudding, used almond extract,a little green food coloring and mixed in finely chopped pistachios in the batter and sprinkled some on the top. I used a pastry bag with the star tip which worked great. I did not refrigerate the dough. After I got through about half of the batter, the pastry bag broke, and I rolled the rest of the dough by hand, with no issues.

Easiest Peanut Butter Fudge
This was yummy! My first time making fudge and it came out really creamy! I too followed the advice of the other reviews and adjusted the recipe to 3cups confectioners sugar 2 cups brown sugar and 1 cup of PB. I also followed the suggestion of starting the 2 minute count down AFTER the boil starts! Again the fudge came out great! We're PB lovers in my house so next time I may another 1/2c PB and see how it comes out!!!
