About this Cook
I am a wife, mother, daughter, sister, sister-in-law, aunt, friend, full-time worker and I just want to be happy. I'm always looking for ways to be happy and self-improve. Recently, I went Vegan and it has taught me a lot. So, now I allow for some seafood and perhaps some little cheats, but I'm still cooking/eating really healthy. And, finally, I've been starting in at the gym slowly, but surely. It is awesome and I'm sore all the time and I'm really proud of myself.
My favorite things to cook
Okay, I don't cook it, but I love to make veggie wraps that I found at one of my favorite restaurants. And I discovered adding lime juice and a sprinkle of salt spruces my wrap up soooo much, that I don't feel the need to dip my wrap in anything! I like to make pasta dishes with a mix of bay scallops and shrimp. Since adding the vegan touch to my cooking, I've discovered all sorts of ways to turn things (normally made with butter, cream, milk, cheese, etc) into healthier delights.
My favorite family cooking traditions
Ummmm, so not vegan, but a lovely memory: My Grandmother used to have me help her to make "angelled" eggs. She'd have me mash up the yolks real good, then she'd add the ingredients and have me stir it all up, scoop into the egg halves and sprinkle on the paprika.
My cooking triumphs
Some of my cooking triumphs are only loved by me in my house, but I've thought they were delicious. Among them is the amaaaazing recipe from AllRecipes, "Angel Chicken Pasta". I've even turned it into a slow-cooker meal. And I add more italian dressing seasoning packet 'cuz it's yummy. Alas, I will now have to find a way to make it more healthy, perhaps even vegan. I'll find a way, oh yes, I'll find a way. One that my husband and I both love and he raves about is a Guacamole recipe found on AllRecipes. Yummo! Some of my triumphs are merely FINDing new recipes that I love so much that I KNOW I will make them again.
My cooking tragedies
The worst was a recipe from AllRecipes. It was a pasta dish with parm cheese added to a sauce ... it became all stringy and clumpy and disgusting. I've never seen anything like it. I wasted some beautiful scallops on that dish:-{

Brilliant Sauteed Broccoli
Amazing. My 5 year old son looked and said "I don't like cooked broccoli" but I made him try a tiny piece. He ate all of the broccoli and then proclaimed that he wanted the same meal the next night because "IT IS SO GOOD AND I LOVE IT!" Thanks for the great recipe.

Pasta with Scallops, Zucchini, and Tomatoes
This dish was wonderful - so light, yet delicious. I used angel hair pasta b/c it's my favorite. There wasn't enough sauce to warrant using fettuccine pasta. I thought more of this recipe than my husband, but I think that is b/c it was a little too spicy for him. I did 1/2 pound bay scallops and 1/2 pound shrimp. And I added green onions in with the zucchini. I will definitely be making this again!

Okay. I am finally reviewing this. This guac is the most amazing guac I've ever had. I make it ALL the time. My husband LOVES it and gets excited when I make it. He loves to dip chips ... and I love it on my rice, beans, tofu! Oh baby! I honestly couldn't tell you how many times I've made this in the past 8 months, ever since finding it!
