Parmesan Chicken

SUPER EASY - I can whip this up after work and have dinner on the table in less than a 1/2 hour. I like to use Japanese style bread crumbs for a more textured breading - just add in the seasonings of your choice.

Pork Tenderloin with Dijon Marsala Sauce

This is a Must Try, 10 Star Recipe!! I am not "a cook" but this was easy, looked like it came from a fancy restaurant and tasted absolutely wonderful. Omitted the shallots, browned some garlic in the oil and drippings, but otherwise followed the recipe to the letter. EVERYONE, including my husband and picky 8 year old enjoyed this one. A definite keeper.

Banana Banana Bread

Sweet! I finally got some bananas into my 7 year old. This was excellent and easy to boot. I had 4 large bananas which was probably not enough, but it still came out great. Added some vanilla but I don't think I would do so again if I had more bananas on hand.

Balsamic Green Bean Salad

Got rave reviews on this when I served it at a post Christmas buffet. Like a previous poster, I tossed the green beans in olive oil and broiled them. This really did make them tender and crunchy and infused with flavor. Substituted red wine vinegar for balsamic as I was out and it was still great, but will try with balsamic next time. Great dish to prepare ahead of time.

Chicken Breasts with Balsamic Vinegar and Garlic

Wonderful recipe. My picky eater 7 year old even devoured it. Of course, I had to omit the mushrooms to have any hope of it being a hit, but it was still wonderful. I added a bit more butter at the end to lessen the vinegar taste of the sauce, again just to make it more kid friendly. Will definitely add this to our regular list.
