Quinoa with Chicken, Asparagus and Red Peppers

I was looking for a recipe containing these ingredients and found a winner!! I read all the reviews to see the tweaks and changes. I combined most of them-sautéed onion, garlic,added a little basil and salt; used the leftover chicken broth to poach my chicken breasts and cooked the quinoa in that. Finally, I sprinkled some feta cheese on top and it was so yummy!! Definitely will make this again and share the recipe with friends and family that want to eat healthy!

Whole Wheat, Oatmeal, and Banana Pancakes

These were great! I only made 1/2 the recipe because there are only 2 of us. I did not have dry milk powder so did not use any but they were still fine. Will definitely make again, probably with less brown sugar because the banana alone seemed to make them sweet enough.

Banoffee Pavlova

This has become a family favorite and is so easy. Great to make for company because it looks like you slaved all day! I have been making it for awhile with great success. Today I did not have a clean glass bowl, so used a plastic bowl. DO NOT TRY IT! When it says use metal or glass, it is true! So-I did have to switch over to a glass bowl to get my meringue stiff enough but it still turned out fine.

Broiled Tilapia Parmesan

YUMMY! I make tilapia alot but usually just use dill or lemon or Old Bay. This was more like what you would get at a fine restaurant! I did decrease the amount of butter to 3 T. and would probably cut back even more.

Amy's Barbecue Chicken Salad

I was trying to imitate a salad I had in a restaurant as well and this we so very close. I used a rotisserie chicken for convenience and it was an easy summer lunch for after church. The restaurant version had jicama added and I was unable to find it at the store, but it adds a little extra crunch. I hope to use that next time.

Chicken and Red Bean Enchiladas

Very good but ended up being a bit more time consuming to prepare than I anticipated. Very tasty and actually low fat and nutritious (except for the cheese....yum!!)

Orange Roughy in a Mushroom Sauce

Fabulous! I was looking for another way to prepare fish and found this. I followed the other comments and did cut back on the pepper and was glad I did. I discovered I was out of yogurt and hate to admit I used sour cream!! (I typically cook low-fat) but it was wonderful.

Fish Tacos

This recipe was fabulous, but next time I will most definitely bake/broil the fish. We never eat fried food, so I ended up pulling all the fried coating off. The sauce is yummy. I also sprinkled some chopped cilantro on top......delicious!
