Easy Pumpkin Muffins

Not well received here, too sweet and cupcake like, I guess we like our muffins more "hearty". I can see why some said "non-muffin" lovers liked these. And the pumpkin was too light a flavor, we love pumpkin, but could barely taste it.

Artichoke Chicken

Ok, I had to review this because DH actually asked for the leftovers!! He is not big on leftovers, but was disappointed I hadn't sent the rest to work the next day (I didn't think it would microwave well). I did as others suggest and used 1/2 mayo and 1/2 sour cream. I also added mushrooms and black olives, and used 1/2 cup Parmesan and 1/2 cup of a shredded Italian cheese blend. I used chicken breast tenders, next time I think I'll brown the chicken before adding the sauce just for looks, may try spinach also. Served once with brown rice and again with whole wheat spaghetti. UPDATE: I now saute the chicken strips 1st in olive oil and garlic, then top witht he sauce, to which I've added spinach to and use 1/2 mayo and 1/2 sour cream. I top it with bread crumbs mixed w/ olive oil! Looks great and DH loves it! A regular on my menu!

Black Bean and Salsa Soup

Love this recipe!! I leave out the sour cream and top with some chopped tomatoes! Great low fat, low cal, high protein dish! It's so filling you can have it as a main course! Even my 3 year old likes it. Hubby asks for it too and it's sooo fast to make, I didn't change a thing with the spices, although make sure you use a good type of Salsa, as that makes all the difference. My son and hubby like it topped with some shredded cheese (jack or cheddar) and some broken tortilla chips.

Sugarless Bars

This is a great recipe. I made a few changes, dried apricots instead of prunes, used 1/2 whole wheat pastry flour and 1/2 unbleached flour and added unsweetened carob chips (my son loves these, if your not used to carob chips don't add them, they do have a strong taste). I also added the spices and used 1/2 OJ and 1/2 water. They smelled great baking and even my husband ate up several before they cooled. I only bake without refined sweeteners of any kind (artificial included) and this will be a frequently used recipe at my house, you can easily vary it by using different fruits etc! Even the neighbors kids ate up a couple bars!!
