My husband absolutely LOVED it! I made as recipe stated, but would have preferred it with fresh mushrooms. That is the only change I'd make next time. And hubby definitely wants a "next time"!

Black Bean and Rice Salad

Well, with the combination of black beans, rice, and corn, it seemed that this could hardly miss. But miss it did, at least at our house. The problem is all that lemon juice. It makes a bitter concoction of what would otherwise be a nice combination of ingredients. It is undeniably nutritious, but that was it's only redeeming quality for us. It makes a ton, which is sad.

Broccoli Cashew Salad

Wonderful flavor and combination of ingredients It was very popular with my guests. I have one suggestion, however. Next time I will ADD THE CASHEWS AT THE LAST MINUTE and mix to coat with dressing, instead of mixing with other ingredients initially. My cashews were not crisp after sitting in the dressing for several hours ahead of time.

Roasted Garlic Mashed Potatoes

Made this recipe for Easter dinner, and was somewhat disappointed. It had a slightly bitter taste. I don't know if it was the garlic, or the parmesan cheese, but I will try another recipe next time.

Prune and Olive Chicken

For all the rave reviews this dish has had, both here and in other sources, my expectations were high. Sadly, this was disappointing. I made it for New Year's Eve, followed the directions exactly,and ended up with a somewhat ordinary and slightly bitter entree. I will continue my search for the perfect company dish, and move on from this.

Baklava

This is an awesome recipe, and very easy to assemble. My phyllo sheets came 18 to a box, so I allocated the bottom, top, and middle layers accordingly (i.e.count sheets and plan ahead for the correct amount of filling--I used pecans--for each layer). My husband, who is a baklava nut, thought this was the best he'd ever had, even considering the professionally made ones!

Garlic Prime Rib

I followed this recipe exactly, using it to serve for a Christmas dinner party. Had a $96 prime grade roast, bone in. Used Polder digital thermometer. While this smelled great cooking, I was slightly disappointed that my expensive roast was somewhat tough. The timing given was faulty, also, as this took 45 min. to an hour longer than expected--not a good thing when you are having a sit-down Holiday dinner! I think next time I'll try the method where you turn off the oven entirely after the first high-heat cooking then cook again 45 min before serving.

Original Irish Cream

Amazing!! I made with Canadian whiskey, and only 1/2 t. almond as other have suggested,and it is fabulous! Served at a dinner party and got rave reviews! Will give this to neighbors for a Christmas gift.

Horseradish Sauce

Wonderful!!Used with my $96 prime grade roast, and every bit disappeared. Flavors blend beautifully if made a few hours ahead and allowed to "age" in the refrigerator. A keeper!

Marinated Grilled Shrimp

Wonderful! Didn't make any changes, and loved it. The seasoning is just enough to give it interest, but not so strong that it overpowers the shrimp. Will definitely make again, probably for company.

Baked Potato Casserole

This is obviously a cholesterol nightmare, but worth every fat gram. Has a wonderful, decadent flavor. I fixed only half, and had plenty for several meals. Would make an excellent dish to take to a pot luck, where everyone eats only a small helping. Mine required a longer cooking time (for a half recipe) by about half an hour, but I am cooking at 6000'. Would allow extra time, however, for the cheese to fully melt even at lower altitudes.
