Mexican Fiesta Pasta Salad

Wow this was fantastic! I made it for a BBQ last night as I thought it would be something unexpected and less likely to be duplicated. I was right! I like to make a new recipe exactly as it's written to give an accurate review, but I did use fat free sour cream and light mayo (I'm trying to drop a few pounds) and it was so creamy you wouldn't have guessed it was healthy. There was just the right amount of wet ingredients so it wasn't dry and there were so many textures with the olives and corn and beans! My taste test turned into a bowl of it before the BBQ and everyone raved about it. I am making this again next week for another BBQ and I will try not to eat it all before hand! Thanks so much for the recipe!

Quinoa Tabbouleh

this was my first attempt at quinoa, and it was delicious. I made sure i rinsed it first, and i used chicken stock instead of water. I liked it warm and cold (leftovers were great!) Now I am trying more quinoa recipes from this site- I am hooked!

Chickpea Curry

this was very good, and satisfied my curry cravings. It was pretty easy to put together, and I served it over rice. I used ground cinnamon, as other reviewers suggested, but otherwise I followed recipe exactly. Next time I might put in some veggies, to give it more variety.

Strawberry Spinach Salad I

Wow! my husband, who never eats fruit or vegetables, just ate half of this salad! I loved the textures, and it was very sweet, even though we followed other's suggestions as cut the sugar in half (and used baslamic vinegar and red onions as others suggested). I used cashews and toasted them, as they are the only nuts my hubby likes. We had this with "balsamic glazed salmon fillets" also found on this site (and a 5 star recipe too).

Balsamic-Glazed Salmon Fillets

this was very good, even though I didn't have any white wine. I cooked mine under the grill for 10-12 minutes, and it was perfect. I served it with a spinach and strawberry salad from this site, which was also a 5 star recipe. Very light and satisfying meal for summer. Thanks!

Maple Salmon with Mushroom Couscous

Wow this was super easy and delicious! I followed the recipe exactly, and it was perfect just as it was. Although I doubled the cous cous, hoping to have leftovers, but we ate it all! Next time I may use thinner fillets, as the glaze is delicious and you get more of it with not so thick fillets (glaze to salmon ratio is better). This was light and fresh and great for summer. Thanks for the recipe!

Six Can Chicken Tortilla Soup

This was a good base recipe, so I gave it 4 stars, but with the additions I made, it was 5! I diced up an onion and cooked it a few minutes with some garlic, and then added the rest of the ingredients (minus the chicken, as I didn't have any). I added some frozen corn, cumin, chili powder, and threw in about 1/2 cup rice and then covered and simmered about 15 minutes (until the rice was cooked). I just served it up, and put a big spoonful of sour cream on top, which made it creamy and smooth (and cooled it down a bit). I just had my second bowl! I followed others reviews and rinsed the black beans first too. This went great with my cheese tortilla! thanks for the recipe, I'll def make this again soon.

Bryan's Spicy Red Lentil Soup

This was very yummy! I made a few changes as it didn't have as much kick as I like, but that is just personal preference. I only had 1 cup of red lentils, so I threw in some frozen corn (it added some great colour too). I added a bit more spice, and I threw in some cilantro for some extra flavour. Instead of water, I used some vegetable stock. I ended up not blending it, as it looked great just as is. It was fast, easy and very healthy too!

Miracle Soup

this was fantastic and it was really easy to make! It was very filling and fresh tasting. I used fresh stir fry veggies (baby corn, snow peas) and they turned out perfect. This is a very forgiving recipe, as I didn't measure anything, and just eye-balled the measurements. Thanks, this is a keeper!

Best Chocolate Chip Cookies

I must have done something wrong, because these were more cake-like than cookie. I read the other reviews and paid close attention to my flour measurements. I used a scale to measure, and the dough did not feel stiff. I was hoping for a nice chewy cookie, but got nice soft fluffy cakes instead. They still tasted nice, so I may try them again and take out some of the flour.

Pesto Chicken Florentine

Wow this was great! I used a whole bag of spinach, and I added a few sliced mushrooms as well. I spiced up the chicken with some hot sauce while cooking, which added some nice flavour to the recipe. I couldn't find any alfredo sauce here, so I made some from scratch (light butter, flour, light cream, Parmesan cheese, skim milk, salt and pepper). I used whole wheat pasta, and you could not tell with all the yummy sauce. It turned out great, and this is in our regular rotation now. Next time we may try it with shrimp for a change.

Spanish Rice II

this was great! I used chicken stock instead of water as others suggested, and it turned out perfect. My husband hates rice and he had seconds helpings of this! I think I only had to cook it for 20 minutes or so, and it was done.

Clone of a Cinnabon

Tastes just like a cinnabon! We made this Christmas eve, and put them on wax paper on a baking tray in the fridge. We let them sit out for an hour in the morning, and then baked them and iced them. I messed up slightly when making the filling, as I just mixed the melted butter right in with the brown sugar and cinnamon mixture, then spread it on with a frosting spreader, rather than brushing it on first. It actually worked out better, since it made it much easier to roll up- the sugar didn't fall out the sides at all and stayed in place better. I think I'll do that next time as well. This is our new Christmas tradition!

Fantasy Fudge

This is wonderful! My first time making fudge, and it came out perfect. I cant find marshmallow creme here in England, so I used marshmallows. This has the best flavour and texture, this will be my Christmas fudge recipe from now on!

Easiest Peanut Butter Fudge

I followed other's suggestions and used 2 c brown sugar, 3 c powdered sugar, and 1 cup peanut butter. It was really thick, but set up nicely. It is very good, but you have to like peanut butter to like this fudge. Many people only ate a small bite and that was enough.

Cajun Chicken Pasta

OUTSTANDING! I did as another reviewer suggested and cooked the seasoned chicken in Pam, then removed it, and then cooked the vegetables, added a bit of flour, then the cream, and then put the chicken back in the pan. I can't find cajun seasoning here in England, so I made it using the recipe another reviewer left- it turned out great! It was the perfect balance of creamy and spicy, and the sauce was thick enough to coat the pasta, but wasn't too runny. Next time, I may add a tomato at the end like someone else suggested, just to see the difference.

Greek Chicken Pasta

Wow this was great! I doubled the garlic, onion and tomatoes, and was pretty generous with the cheese too. It turned out creamy, tangy, and very fresh tasting. I am making it again this weekend, we can't stop raving about it! My husband had never had artichokes before, he still isn't sure what they are, but has asked for this dish again.

Ed Zieba's Famous Family Pork Chops

This turned out really good- I read the other reviews, so I was careful to use lots of season all and onions. I put in some dry onion soup mix as suggested by another reviewer, it gave it a nice flavour. We will try the BBQ sauce with it next time. I dont think i'll make it too often, but it's a great change from our usual dinners. You will have nice moist pork chops with this recipe.

Cod with Italian Crumb Topping

This was really good! I have never cooked fish before- with the exception of frozen fish sticks, and I was worried it wouldn't turn out. I followed the recipe exactly, with the exception of using a wash of light mayo/lemon juice instead of egg whites (thanks other reviewers!) It was crunchy, moist, and flavourful. I used haddock as it was on sale. My husband has requested this be put on our regular dinner rotation now.
