Candy Cane Fudge

This is the best peppermint fudge recipe I have tried. It is definitely rich, I cut mine into 1 inch squares. I opted to leave out the food coloring, it is beautiful with just the crushed candy canes on top.

Tasty Baked Meatballs

My family devoured these! The first time I made them, I followed the size that was indicated on the recipe. They were really yummy, but fell apart more than I would have liked. The second time around, I made them about half the size and they didn't fall apart and they also had a better texture - a little more crispy/solid and not too soft.

Slow-Cooked German Short Ribs

Great recipe, but we didn't care for the cut of meat (beef short ribs). Too fatty. We will try this recipe again with a different cut of meat and I am sure it will be a much more complimentary outcome for this very yummy recipe.

Curry Pumpkin Soup

I love the simplicity of this recipe, however I omit the sugar and add a few other spices like red pepper, chili powder and paprika as well as garlic salt to make it a savory soup. I still love the curry. I change out the vegetable broth with chicken broth. This is the best recipe for large groups. Instead of garnishing with pumpkin seeds, I like to change it out with either toasted walnuts, sautéed mushrooms or crumbled bacon (or all three!). It is great to offer your guests a choice of garnishes - especially if you have picky eaters, or ones on special diets.

Smooth Sweet Tea

Not being from the south, I can honestly say that while I have always liked iced tea, I never LOVED it. Last year, I tried some real southern iced tea while in New Orleans and was instantly smitten. This little secret makes it so much like the southern iced tea I experienced, it has made drinking iced tea at home very enjoyable and I always try and keep a cold pitcher of it handy in the summertime. I use splenda or stevia in replacement of sugar to keep the calories down, but it is just personal preference.

Bayou's Mardi Gras Slaw

This is fantastic! I changed a few things because of ingredients I had around the house: I simplified the ingredients, didn't have dry mustard or celery so I used a little dijon instead and skipped the celery. I left out the zuchini and put in a green bell instead to give the green color. added some green onions too. I did not use brown sugar (which I'm sure would taste great) but opted for granulated splenda for diet reasons. It was such a hit that my grandmother who is the amazing cook of the family wanted the recipe. Didn't tell my grandmother about the splenda though. She would have spit it out. :)
