Two Ingredient Pumpkin Cake

I made these as cookies before, and they are much better as cookies versus cake. I followed the recommendations of the folks here who suggested adding three eggs to make it more cake-like. I also threw in a dash of pumpkin spice and ginger to the mix. I got alot of compliments for it.

Portobello Mushroom Stroganoff

One word sums up this recipe: BLAND. Actually. two words.... extremely bland! I was so excited to try this recipe, because I love mushrooms and I love stroganoff. Perfect combination. However, this recipe, as it stands, does not do it justice. The first time around, I followed the recipe as is. It was unpalatable. So, then I scoured the comments to see what other additions I could make to salvage it. So I added garlic, Worcestershire sauce, soy sauce, onion soup mix. It was only then that my family & I could eat this. Also, as one commenter already wrote, this recipe from start to finish take a lot longer than the recipe alots. So if you do decide to make this, I would give yourself one hour.

Pumpkin Bread IV

Love love this recipe!! I had previously tried the Maine Pumpkin Bread recipe (also on this site); but this beats it, hands down. I did make some modifications per the recommendations of other users. First, I replaced all the oil for applesauce (1:1 ratio). Second, I only used 2/3 of the recommended sugar servings. Third, I doubled the cinammon & nutmeg servings. Fourth, I added ginger and pumpkin spice, as well as a dash of vanilla. Lastly, I threw in some chocolate chips ( I would recommend mini-chocolate chips). The result was pure deliciousness. Here's another tip: Heat the bread for a few seconds so that the choco chips melt into the bread. This is my go-to bread recipe. Seriously delicious and easy to make.

Downeast Maine Pumpkin Bread

This recipe was just OK. I followed it to the letter, and found the end result to be very chewy, bland, and just overall, heavy. I gave it three stars because it did seem to get better as the days elapsed. By day 5, it tasted much better than day 1. The Pumpkin Bread IV recipe on this site is MUCH better, in my opinion.

Special Buttercream Frosting

The end result of this recipe tasted like a tub of shortening. I followed the recipes exactly as is, but will not be using it again. The only reason I gave it two stars, versus one star is because the frosting was stiff enough to pipe onto my cupcakes without losing form or melting (e.g. a pure butter frosting). Otherwise, this was a fail.

Too Much Chocolate Cake

I took the advice of alot of reviewers and substituted applesauce for olive oil, and low fat sourcream. The taste was delicious, not too sweet, which is what my family likes. However, I found the texture to be extremely dense- almost like that of a brownie. I was planning to make it into a 2 tiered, fondant-covered cake, and all the while I was crumb-coating, I felt like I was coating two big brownies! When I make this recipe again, I will keep to a 13x9 pan, or a bundt pan. Otherwise, this was yummy!

Hummus Pizza

I loved this pizza, and so did my picky 2yo daughter. I used Meditteranean hummus and red pepper spread- both from Trader Joe's. For cheese, I put Asiago and a mixture of cheddar, Jack, Monterey, and mozzarella (can you tell I LOVE cheese). For veggies, I used fresh basil, mushroom, red & orange peppers. It was so yummy! Double Layer Pumpkin Cheesecake

Absolutely delicious and so easy to make. I made this for the first time for Thanksgiving, and I had all my family members asking for more. As for the recipe itself, for the most part, I followed it very closely. Except, I didn't have cloves so I excluded those. Also, I doubled the amounts for cinammon and nutmeg. Perfect! THank you for this wonderful recipe!

Artichoke & Spinach Dip Restaurant Style

Absolutely delicious!!! Everyone who tried it loved it and asked for more. I didn't change much from the original recipe other than using marinated artichokes, marinated mushrooms, and a tad bit more crushed garlic. Otherwise, perfect as is.

Crab Dip

I made this last night, and used whole wheat pita cheaps as the dipping "mechanism." I wish I had read some of the previous reviews prior to making it. Reason being that at first sniff and taste, I found the dip to be "fishy." Someone recommended using lemon to eliminate any trace of fishiness. I will have to try that next time. In addition, it was a bit bland as is. I had to add much more garlic seasoning and grated black pepper. I also added a dash of parsley. I will make this dip again, but this time, I will add much more seasoning to combat the blandness.

Groovy Green Smoothie

I admit to being skeptical about this recipe at first. I wasn't quite sure if I was going to taste the spinach. I decided to try it because it is very healthy (we need our greens!). Surprisingly, my family & I actually enjoyed it. I ended up adding 1/4cup of honeyed granola, two tablespoons of flax seeds, and a cup of ice. It was very delicious and nutritious. My husband wasn't used to seeing a green smoothie and thought it looked weird; but I got a kick out of the "greeness."

Pistachio Fluff Fruit Salad

Delicious & easy recipe! At first, I wasn't too keen on the pistachio pudding taste; but after giving it a try, I was hooked... as were all my family members. They came away asking me for the recipe. What would I do differently the next time around? I'd add less whipped cream - esp since the marshmallows already gave the salad a creamy/fluffy texture. I also added crushed almond slices which gave the salad a crunchy texture. Overall, though, the recipe is delicious as it is and super easy to make. Highly recommend!

Corn Chowder II

I agree with previous posters who wrote that this recipe is a good "starting point" or base but still needed to be enhanced. I initially found it to be bland... aka a glorified creamed corn soup. But I added various spices to the mixture: cumin, garlic salt, basil, ground pepper, and yes, even a dash of chili (for the extra zing). I also threw in more veggies (e.g. celery, mushrooms), as well as some shrimp. A previous poster suggested adding sour cream before eating the soup. I tried that it was much yummier!

Chuck's Favorite Mac and Cheese

This recipe was very tasty and well-received by my husband & me. A couple of comments, however: Contrary to a couple of previous comments, my dish came out alot creamier than I expected. Who knows? Maybe I put more cottage cheese or sour cream than the recipe called for. Also, I added about a tablespoon of cumin and a dash of pepper to the mixture. Next time, I may add more sour cream (vs. cottage cheese) for that extra "zing."

Curry Chicken Salad

Very easy & delicious recipe. Besides the celery, I added almonds, dried cranberries & red onions and a dash of cumin (in addition to the curry seasoning). I also "marinated" the chicken in vegetable broth to give it more flavor. Everyone loved the final product. Thanks for sharing this recipe.
