Chewy Granola Bars

This is an excellent base recipe that I will definitely use again! I made a bunch of tweaks to suit what I had on hand, including swapping 1 cup of crunchy peanut butter for the butter, adding extra honey (as suggested by other reviewers) and a lil' molasses, and reducing the sugar. I also only used 4 cups of oats and subbed the last 1/2 cup with coconut instead. In addition to chocolate chips, I also added dried cranberries & mango, toasted almonds, sunflower seeds, and hemp hearts. I pressed the granola down mid-way through baking and once again before it cooled. The end result was not crumbly at all. In fact, they are amazing!!

Easy Mexican Casserole

Delicious Black Bean Burritos

I've had this recipe store in my recipe box forever, and wish I had tried it sooner. Fast, easy n' super tasty. I subbed light cream cheese to reduce the fat. I also baked 'em afterwards with a little hot sauce and cheddar melted on top. So good!! Will definitely make this one again.

Sukhothai Pad Thai

I've tried this recipe twice now, only because I forgot that I didn't enjoy it the first time. I tried implementing Bes' suggestions, but my husband n' I still didn't care for it at all. Maybe it's just us, because this does seem to be a very popular recipe.

California Chicken

Oh my goodness, this recipe is so simple and so good that I've already made it twice this week. I subbed the chicken breast for the meatless kind and used mozzarella cheese because that's what I had on hand. The second time I made it, I added a light layer of hot sauce beneath the tomato for some extra zip. A new favourite!

Foil-Pack Taco Chicken Dinner

This was an easy twist on a recipe I make all the time. While I appreciated the quick/no clean-up for the baking pan, I wasn't wild about all the salsa juice on my dinner plate that had to be mopped up before serving. Give n' take, I guess.

Spinach, Red Lentil, and Bean Curry

I used chickpeas instead of mixed beans, since that's all I had on hand. I thought that this recipe was good, but missing *something*. Taking the advice of another reviewer, I added some more spice and a spoonful of brown sugar to the leftovers, and that was the key. I think I will make this again, and maybe add some dried cranberries to the mix.

Spinach Stuffed Chicken Breasts

I substituted with faux chicken & bacon and used fresh spinach instead of frozen because it's all I had on hand. I also sauteed a little onion to add to the mixture. Delicious!! Will make this again.

Mediterranean Pasta with Greens

I wasn't sure what to do with the rainbow chard that arrived in my organic delivery box, and this recipe was the perfect solution. I added a few canned tomatoes to make it a little saucier as other reviewers suggested, and also substituted feta for parm. Delicious!!

Pan-Fried Asparagus

Super easy and very tasty! I have made this side-dish many times, and would give it five stars, except that I tend to halve the amount of butter called for in the recipe. I don't think it requires that much, but that's just me. Sometimes I like to add a touch of balsamic or a squirt of lemon too.

Rosemary Chicken with Orange-Maple Glaze

Wow! Even though this recipe already had some great reviews, I have to say that it was even better than I expected. I followed the recipe as directed, only substituting the chicken for meatless chicken breasts. The sauce seemed to be taking a while to thicken, so I ended up adding a tsp of corn starch to speed the process. Absolutely delicious!

Chicken Breasts Stuffed with Perfection

I've had this recipe saved for over a year, and finally got around to preparing it this weekend. As suspected it was absolutely delicious, with gorgeous presentation! I'll have to make it again for company. I prepared it exactly as directed, only substituting real chicken breasts for the meatless kind, which I cut in half in order to stuff. Wonderful! As one reviewer suggested, the stuffing would make a great dip!

Spinach Salad with Pepper Jelly Dressing

Okay, so I tweaked the ingredients (red grapes, toasted pecans, dried cranberries and blue cheese), but it's clearly the unique dressing that sets this salad apart from other spinach salads out there. Awesome! Will definitely make again (and again).
