Baked Slow Cooker Chicken

This is a great recipe. Added the 1 cup of chicken broth,1 bag of baby carrots, mushrooms, & 2 onions. Pulled the chicken out when it was done and roasted it for 15 minutes to get a crisp skin. Added some flour (salt and pepper) to the left over chicken drippings and broth for a great gravy. It was heaven.

Slow Cooker Sweet and Sour Kielbasa

Great for a slow cooker recipe. I usually try to make it the way the recipe states but some of the ratios just seemed to far off. I used no butter but a little olive oil to saute onions and peppers and brought sauce to a boil in the skillet. I kinda think this whole step (saute in the skillet) is unnecessary in a slow cooker and will try it by just dumping it all in next time. Although I do enjoy sausage when its been browned up. Here's what I changed no butter(without all that butter it'll be much fewer calories and much healthier), just about a tablespoon of olive oil, half a cup of sugar, 14oz of ketchup, an added green and yellow peppers and a can of pineapple and used half of the juice. Very much happy man or kid food. Its not gourmet but it is very tasty comfort food. Served over rice.

Sweet Potato Casserole II

When you add the "Streusel topping" suggested by Momsavedbygrace this is a 5 star recipe every time. This will be my second year making this recipe for the family holidays and it is always a hit.

Italian Spaghetti Sauce with Meatballs

Been using this as the base of my sauce for at least 5 years. These are the things I've changed over the years. I use one half teaspoon of fennel, two bay leaves instead of one, add a mushrooms and green pepper to onions when I sauté them, and I use the meatball nirvana recipe from this site. If sauce looks too thick I use one half cup dry red wine. The recipe is good as is, but with these changes it is craveable.

Eggplant Parmesan II

It does really take about 2 hours, but there is alot of downtime to relax or make a side dish. A hour of that cook time is waiting. 30 minutes for the eggplants to "sweat" and 35 minutes for it to cook. So its really not that bad and the taste makes it worth the effort. You dont need 4 cups up breadcrumbs, 2 would probably be just fine. Do add the parmesan and Italian seasonings to the bread crumbs and a little salt. Very light dinner, won't weigh you down.

Slow Cooker Mashed Potatoes

Best mashed potatoes ever! The potatoes are extremely moist. And I love how versitile the recipe is. You can add any seasoning and flavors you like, it's pretty much idiot proof.
