Cucumber Tomato Salad

I followed the advice of several other reviewers and used balsamic vinager instead of cider, and used red onions instead of green. I thought the "dressing" was just right - not too tangy, not too sweet. I will make this healthy snack again!

Sweet Restaurant Slaw

Giving this five stars because it is exactly what it says it is... My husband loved this cole slaw and even said "it tastes like the kind from KFC!" I wouldn't eat it (not a big coleslaw person), but it was exactly what I was going for. Thanks!

Macaroni and Cheese with Caramelized Onions and Bacon

Well, I debated a long time on how many stars to give this recipe. If I could have given 3 1/2 I would have. Let it be known that I made this recipe to the letter. The recipe takes MUCH longer to prepare than the said prep+cook time. I also believe there are too many ingredients. Most of the best cuisine is created with few ingredients - just travel to Italy or Spain and it is apparent. Some of these could have been modified or left out (maybe bumping up the quantity of more important ingredients). I won't be making this again; a little too rich and way too time consuming for a side dish. Don't let that deter you, though, because Im glad I made it and if you love all things mac-n-cheese, go for it. That being said, the outcome is good. Very gourmet tasting, and has beautiful aesthetic appeal.

Hamburger Skillet Supper

This is essentially hamburger helper. I did as other reviewers, and added a can of cream of mushroom soup. If you Add the condensed soup, dont forget to keep the water at 2 Cups or the mixture will become too dry. The taste was good; I would add onions rather than mixed vegetables. Easy to make and very affordable. Will test out on my husband when I am strapped for time, but I already know this dish is right up his alley.

Homefried Potatoes with Garlic and Bacon

Tried this instead of my usual home-fried potato recipe from my mom. Although I like incorporating bacon (into anything, really) there is no good way to get the potatoes crispy. I am still giving it four stars because the potatoes were still declicious and often it is a matter of opinion how crispy a potato should be!

Brunch Enchiladas

Four stars because i followed other reviewer's suggestions and added green pepper, onion, and sirloin steak to the wrap. To the liquid mix I added salt, pepper, hot sauce, garlic salt, and used more cream/eggs so it would cover the enchiladas. Family enjoyed these at a brunch and I love that you can prepare them the day before. It is important to remember to let them sit for about 15 minutes before serving. They will still be hot; without doing so the liquid wont set properly and the enchiladas will be a bit runny (yet still delicious). Will make again and probably continue to switch up this versatile recipe.

Cream-Topped Grapes

Im giving this 5 stars because it was a big hit as a brunch for a light dessert (before the actual dessert). Yes, the topping is sweet, but thats what its supposed to be, i believe. Not something I would make all the time, but definitely will break out this recipe again for special occasions where you need that one little "extra" to finish off your menu - Even if its just for the look (I put them in my crystal white wine glasses for added aesthetic appeal).

Simple Scones

Perfect! I followed the recipe with the exception of using the food processor for the dry ingredients + frozen butter only. These scones turned out beautifully. I am always hesitant to make scones because they are often a bit too crumbly and dry. These still had the perfect scone texture, without falling apart and without being overly dry. Will make again and again! Thank you!

Crab Stuffed Manicotti

Truly delicious but extremely rich! Haven't had the opportunity to experiment yet, but I would like to try some substitutions and/or adjustments in ingredients to make this recipe just a bit more subtle. Using the recipe as is, i would suggest as a tapas. Great recipe!

Best Bruschetta Ever

This was a really great bruschetta recipe. Easy and delicious. I rated it a 4 instead of a 5 because i think it is definitely better with suggestions from other reviewers. I also added a couple splashes of balsamic, 3-4 chopped or diced garlic cloves (i love garlic) and a healthy portion of chopped onion. I sauteed the onion and garlic first, but i dont think thats absolutely necessary. Finally, i added some shredded mozzarella to the mixture for some texture and to hold the mixture together. I marinated them ingredients together overnight and spooned them onto mini bread slices and toasted. Everyone at our christmas party loved them! Thanks for the recipe - i think its very versatile and i will definitely make again.

Banana Banana Bread

Delicious! And SUPER easy. This turned out great. I made it in two smaller pans so i needed about 10 minutes less cooking time. After I took out the loaves, they fell a bit and im not sure why that happened. I also would have preferred to put walnut pieces in the bread, but forgot, so i simply added them on top and it turned out great. this bread is moist and delicious - thanks for the recipe!

Melt in your Mouth Cookies I

The taste is okay but the cookies turned out flat. I was looking for a recipe that didn't include certain ingredients since i am out of the country and its harder to find some things... not terrible, however, i probably will not be making these again.

Chocolate Caramel Nut Cheesecake

I added an extra half package of cream cheese and baked the cheesecake an extra 15 minutes and it still was not enough - maybe my oven is not as hot as the average, however I am giving this a 4 instead of a 5 because although good - it was not great. I think the broken up pieces of candy bar would have been better if they were smooth instead of in pieces. Very good, very rich recipe. easy to make as well. Thanks!

Kettle Corn

Amazing and amazingly easy! I wanted to give this recipe a 4 instead of a 5 because it left out a key ingredient to kettle corn - salt - but it just tastes too good and is too easy to make to give a 4!!! The 3 kernel test, adding the sugar, then the kernels is perfect. Finally, when you remove the pot from the stove, sprinkle generously with salt - true kettle corn from a fair is always salty but sweet. Thank you for this awesome, easy recipe. We will definitely be making this on a regular basis!

Creamy Potato Leek Soup II

Wow! I was at the store and noticed the fresh leeks and bought them on a whim, then came home and looked up a recipe - i'm so glad I picked this one! I am literally eating the soup as we speak and it is phenomenal. After reading other's reviews and seeing what I had on hand, I used 5 cups of chicken broth instead of 4 (5 cups of water seasoned with chicken buillion cubes); used half a pound of bacon and half a pound of cubed pancetta (I live in Italy now and we have to use what we can find!); sauteed 4 chopped garlic cloves with the 2 whole leeks; after the potatoes were tender I took out approximately 1/4 of the batch and mashed them easily by hand with a masher. This recipe is delicious. A good way to clean leeks for those of us who dont cook with them often is as follows: 1. Rinse the outsides, cut off the bulb/root. 2. remove any outside leaves that are spotty or extra dark green, trim the ends of the green top of the leek. 3. cut the leek lengthwise down the middle, and chop according to recipe. 4. Place leeks in bowl of warm water and swirl around to remove excess dirt. 5. scoop out leeks and place in colandar, rinse. It seems like alot of work, but really its not that hard and it is worth it to not have dirt in your recipe. Thanks for the delicious soup - will most definitely make again!

Honey Baked Chicken II

I'm giving this recipe a 5, to be fair because i did combine this recipe with another on this website (Honey Baked Chicken I). I made mine with a roaster, rubbed it with garlic, salt, and pepper, and then basted with the honey mixture. I did not use curry powder, but the mustard added a delicious kick to the honey. I basted mine every 15-20 minutes and it turned out perfectly. The next day i used the left-over chicken to make sandwiches - delicious!!!
