I've cooked for 40+ yrs so when you hear what I did, must be my age(under 55).Used my new crock pot on this & made some adjustments.Added 2 more carrots,1 more potato, and 1/2 stalk of celery, but also rubbed the roast with Seasoned seasalt, and Badia's steak seasoning (instead of salt & pepper)before browning. I added 2 pkts of Badia Sazon Tropical flavor pkts & used 3/4 c. white zinfandel wine(instead of water), then decided to be creative & insert one clove of garlic(sliced) into slits in the roast & add 2 fresh bay leaves.
I planned to cook it for 10 hours since I was going out, however after 4 hours of cooking on low, I realized I left the compressed cardboard packing between the outer & inner lining of the crockpot (I'd used this crockpot once before, just put it back so it was 'cushioned'. Since it was my first crockpot with a removeable liner,I'm not used to it yet.) I quickly lifted out the liner & knocked off the 'packing', &reinserted it into the outer pot.Figured the extra hr would do it good, since I'd just insulated the first 4 hrs worth of cooking time. When I got home I added more water to cover vegs, and realized it could have been done at 8-9 hrs, but didn't get a chance to try it until the next day. Very good!! A little salty, but that was MY fault. Next time, I'll leave out the flavor packets. Husband & I thought it was VERY GOOD, though. (Good thing I don't get spazzed-out about my cooking mistakes!)
