Stuffed Cabbage Rolls

I've never eaten cabbage rolls before, much less tried to make them, but these were great! My cabbage-hating kids devoured them, so that I was glad I made a double batch.

Pumpkin Oat Bread

Just go on and make a double batch! I used the flour blend in the notes and cut back on the sugar a little. I made one loaf and used the other half the batter to make 9 muffins with raisins. Very yummy!!

Deluxe Macaroni Dinner

This isn't anything fancy or spectacular, but it's a great idea when I'm feeling lazy about making dinner. It's all four food groups, and my family loves it! I have to double the recipe for the four of us if I don't make anything else to go with it. I just use regular store-brand mac & cheese, and a 16oz package of frozen mixed veggies instead of the broccoli. I also use garlic powder instead of minced garlic, with some salt/pepper or italian seasoning, otherwise it's a little bland.

Friendship Soup Mix in a Jar

This is a great recipe! We've been eating it about once a week this winter. Instead of onion flakes, I just cook a diced onion with the ground beef, skip the boullion, and double the pasta. Who would have thought my family would ENJOY split peas and lentils? We always eat it with cornbread, and I include a cornbread mix when I give it as a gift.

Banana Wheat Bread

I made this right to the recipe, baked it in the toaster oven for 55 minutes, and it turned out great. Not as sweet or oily as traditional banana bread, which makes it a great afternoon snack for me and my kids.

Sue's Hot Fudge Sauce

What a super recipe. After several attempts, I've decided it works best to mix the cocoa and sugar together before adding the other ingredients. I also use instant coffee crystals, but I mash them into a fine powder first. Or I use a tablespoon of espresso. Goes great with brownies, ice cream, cake, peanut butter, fruit, etc.

Easy Ice Cream Cake

Ice cream bars are expensive these days, so I actually made a chocolate cake, then sliced it into 12 slices(like bread) and layered them with soft ice cream and whipped cream. I used a homemade mocha fudge sauce and topped with nuts and fresh berries. It was super! This has become synonymous with birthday cake in our home.

Crazy Crust Pizza Dough

I never made homemade pizza because I didn't like to deal with yeast, so this is great. I've made it more than a dozen times now, and get a request for it at least once a week. I make a triple batch (with 4 eggs), and use two large insulated cookie sheets. Cook for 12 minutes, then flip over and spread with tomato paste. My 3-year-old handles all the other toppings. Then back in the oven until the cheese starts to brown. Thanks for this great recipe!!
