Rich and Creamy Tomato Basil Soup

I made this for my husband and he loved it! Easy to make...except for when the lid partially blew off the blender...that clean up was not enjoyable!

Italian Sausage Soup with Tortellini

I made this for my husband who loves soups. I ommitted the carrots due his lack of liking them. His initial comments were that it was pretty salty and could use more basil. He did say that it was better the second and third day. Still, he didn't rave like he usually does about other soups that I have made. I probably won't make this again.

Breakfast Casserole II

I made this recipe for Easter brunch and got rave reviews. It truly was phenomenal! I layered the tator-rounds in the bottom of the baking dish. It actually made a full layer and then I spaced out the remaining rounds on a second layer. I whisked the eggs and milk together and then added the remaining ingredients (including the sausage) to the egg mixturem, then dumped over the potato rounds. I will make this dish over and over again!

Mulligatawny Soup I

My husband loves mulligatawny soup and Indian food. He was skeptical that this recipe would taste like what he was accustomed to having at his favorite Indian restaurants. Due to his pickiness we ommitted the celery, carrot, and apple from the recipe. He was surprised that this recipe called for chicken. In the end, he loved the soup and is asking that I make it regularily. Next time I will double the recipe as it only made about 3-4 servings rather than the 6 that it suggested. I would also add either a little water or additional chicken broth to liquidfy it a little more. It was pretty thick...but delicious!

Seven Layer Taco Dip

I made homemade salsa and guacamole and it made the dip very fresh tasting. I also ommitted the bell pepper, as I do not care for the taste. Finally, I did not use lettuce as I thought it would wilt easily. With these modifications, the dip turned out terrific. I will make this again!

Chicken Tortilla Soup I

We made this dish for our Super Bowl get together. It was a hit! We served it along with pepperjack/cheddar quesadillas, cornbread, and chips and salsa. Great menu! The only modifications that I made were to substitute 2 tsp. of cumin instead of oregano, ommitted the corn and hominy (my husband is not a fan), and doubled the amount of chicken broth. We will make again.

Absolutely fantastic! I used dark chocolate kisses and they were a chocolate lover's dream. I will make these again and share the recipe with friends. I wasn't quite sure if the butter needed to be at room temperature since it didn't specify. I left my butter out on top of the ceramic stove-top while my oven preheated (about 10 minutes). When combined with the sugar it never really got "fluffy". Nonetheless the cookies turned out great.

Annie's Fruit Salsa and Cinnamon Chips

Absolutely delicious! I had to alter the recipe a bit due to the unavailability of fruit in the winter season in Nebraska. I used 1 bag of frozen berry blend (strawberries, cherries, blackberries, raspberries, and blueberries), 2 braeburn apples, 1 bartlett pear, apricot preservers, and the rest the same as the recipe. I was surprised at the large amount that it made. I save half and used it with yogurt, ice, and fruit juice in smoothies. It was fabulous both ways. I will make this again!

Crabby Cream Cheese Wontons

My husband and I thought that there was too much soy, sesame, onion, and worcestershire sauce. It was a little over-powering for us. We ended up adding 4 blocks of cream cheese to try and dilute the mixture.

Jamie's Cranberry Spinach Salad

This was fantastic! Unlike many other vinegarettes that I have tried, this one seemed to have the perfect balance between sweet and tangy. I add crumbled pieceds of brie to my salad for a special touch that guests loved.
