Black Bean Chili

This is a healthy and delicious meal, but it is time consuming due to all the chopping. I used less chicken broth and added more garlic powder. I also added a small can of tomato sauce to thicken the chili. Definitely puree the 1 1/2 cups of soup. It makes a huge difference.

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair

Thanks to all the reviews. I followed the advice of several. I tossed my shrimp in basil, oregano, red and black pepper, and salt I had some fresh asparagus that needed to be used. Saute the broccoli,asparagus, 1 large mushroom, lots of garlic, and jar of fire roasted peppers, plus the can of tomatoes, not drained. To this I added a few more dashes of red pepper flakes because it seemed bland. After about 5 minutes, I added the shrimp and it was truly delicious.Don't forget to add some white wine when you put shrimp into the skillet. Will definitely make this dish again.

Italian Zucchini Saute

I prepared this as a side dish. The ingredients were good, but there are so many other wonderful ways to make zucchini. I probably won't prepare this again. I added a pinch of sugar which I feel made it too sweet and added no salt. I will be searching for another recipe soon since the summer months and all the fresh produce are appearing

Crystal's Chicken Saltimbocca

I took the suggestions of others and sauted the fresh spinach and fresh mushrooms. Baked at 400 degrees covered and then uncovered the last 10 minutes. My husband and I enjoyed this meal very much. I'm not big on chicken, but this was a delightful meal and simple to prepare.

Italian Halibut Chowder

Baked Asparagus with Balsamic Butter Sauce

What an easy and different way to serve asparagus. My entire family loved it, including my 3 year old granddaughter. The only reason I didn't give this a 5 star is because my husband still likes it steamed with pepper and butter. Will make this again.

Scalloped Potatoes and Onions

I was extremely skeptical when making this recipe because my family expects scalloped potatoes to be served on Easter. Wow, what a pleasant surprise. They were wonderful and alot more healthy. This is definitely a keeper. I still can't believe that no cream product was included to make this wonderful dish.

Fish Chowder

Tis chowder is very good and I will definitely make it again. I agree that extra seafood needs to be added which I did; clams, shrimp, and scallops. I also added the cream corn which added more body to the chowder and I definitely used more of the Old Bay then the recipe called for. It was very tasteless without the extra.

Angel Hair Pasta with Shrimp and Basil

This meal is awesome! It is so simple yet delicious enough to serve to guests. I did add a tablespoon of tomato paste, used only two cans of the 14 ounce tomatoes, added extra garlic and used the fresh basil. This is a definite keeper.

Maria's Pepper Steak

This is definitely a quick and easy recipe. I used skirt steak and it was delicious. Definitely need to thicken the sauce, if serving over rice. I cooked the beef the day before and allowed it to take in the flavor of the sauce. Then all I needed to do was cook the vegetables.

Garden Basket Pasta with Clam Sauce

Made this for dinner this evening and it was fantastic. Followed the directions, except I used a small can of Italian tomtoes)with basil,garlic,etc) and added 2 tablespoons of tomato paste to thicken the sauce. I also added some fresh asparagus. Served with garic bread. It's a keeper.

Yes, this recipe is expensive, but every mouthful is worth every penny. I added extra tomatoes as some suggested and it created too much broth-tasted wonderful though. I suggest sticking to the recipe for all ingredients. We loved it! Will absolutely make again.

Summer Corn Salad with Asparagus

I made this for the labor day picnic. This is such a wonderful side dish. I agree that extra olive oil and balsamic vinegar is needed. What a healthy dish to serve when summer's fresh vegetables are coming to an end. This is a dish I will continue to use. Fantastic!!!
