Jacky's Fruit and Yogurt Muffins

I made these with fresh blueberries, regular flour, but 1/2 c splenda and 1/2 c regular sugar. I got exactly 12 nicely sized muffins and they were tasty!!

Farmer's Casserole

Yum, yum, yum. I made this for Easter brunch and everyone loved it. Definitely let is stand a bit before cutting. I also used FF evap milk and it tasted great!

Tomatillo Salsa Verde

So tasty. I had to use dried jalepenos (ground up in the food processor) due to the pepper salmonella scare,but it was still tasty. So easy and good. Mine was not watery once it sat for a bit.

Chocolate Truffle Cookies

I made these for an office potluck and they were a big hit! They are VERY rich, one or two will do ya. Good with a glass of milk. I didn't refrigerate mine for a whole hour - I put them in the freezer for 30 minutes and that seemed to work. YUM!

Best Breakfast Cookie

AWESOME! I loved these for breakfast or dessert or just a snack anytime. I used prune baby food, and added raisins and dried cranberries - I don't care for nuts. SO GOOD!

Flourless Peanut Butter Cookies

My friend and I made these with Peanut Butter & Co. Dark Chocolate peanut butter - so good!!! Great for a gluten free cookie! We also added chocolate chips for a double chocolate treat. YuM!

Easy Biscuits

Easy and tasty. I did mine as drop biscuits, they were a bit crumbly but tasted great with jam. Following other reviews, I added a tad bit of salt and sugar.

Butternut Squash Soup II

This was good, but not great. Could be four stars with maybe a bit of seasoning. I did use the "bake the squash whole" technique and that worked great. I also used an immersion/stick blender to blend it, it was very fast. Overall, a tasty soup, just not spectacular. Very healthy and easy though.

Very tasty and easy. I realized as I was mixing it that I wasn't going to have enough to frost my two layer cake, so I added a bit more sugar and milk, it worked out great. YUM.
