Risotto with Chicken and Asparagus

I made this last night and it was outstanding. My husband and I both loved it. The only modification was I used a little more (about 1/4 cup) white wine. I agree with an earlier post that the asparagus could be added later. It would have a better texture and color. Will definitly be making this again.

Jordan Marsh Style Blueberry Muffins

This is my families favorite muffin recipe! I have been making it for years the only difference being 1/2 cup unsalted butter instead of shortening. I have also made these substituting diced apples for the blueberries and sprinkling the top with cinnamon sugar or cranberries and adding zest from one orange. FYI...Jordan Marsh was a department store in New England and Florida. They had a bakery that was regionally famous for its blueberry muffins.

Roasted Carrot Salad

This salad is unbelievably good. I made it exactly as written and the flavors complemented each other so well. In addition, it is so colorful it looks pretty on the plate. I used the whole 2 pounds of carrots for 3 people, expecting to have leftovers and only ended up with about a cup left. Needless to say, I will be making this again and again!

Spaetzle and Chicken Soup

This was delicious! I only gave it 4 stars because I made a few minor changes. I used 4 thighs and 2 split breast pieces, sliced carrots instead of baby carrots (that was what I had on hand) and added more broth after the spaetzle had soaked up most of the broth. I also diced the onion and sauteed it along with the celery and some diced carrot before adding the chicken and the broth. A very tasty soup!

Day-After-Thanksgiving Turkey Carcass Soup

This is very similar to Better Homes & Gardens Turkey Frame Soup. Here's the thing with soup...it doesn't have to be exact. Use what you have and what you like! I usually have a >20lb turkey so I break up the carcass to fit it into the pot more easily. Otherwise this is a great way to finish up the leftover turkey.

Dad's Leftover Turkey Pot Pie

Great pot pie! Used only slight modifications: Used fresh carrots and frozen peas instead of a pea/carrot mix, cooked the veggies in broth instead of water and used the broth to make the sauce. Will try sauteing the carrots and celery with the onion the next time. This was a HUGE hit with the family. Will be using this recipe again and again.

Exchange Gang Pasta with Shrimp

Loved it! I made 2 small changes. First I added about 1/4 tsp crushed red pepper along with the tomatoes and garlic to add just a little heat. Second, I doubled the amount of sauce, because my family always says there is no such thing a too much sauce, but I don't really think that it needed the extra sauce. This was a very tasty dish that I will be making again.
