Shrimp Lemon Pepper Linguini

This is a great recipe except the amount of pepper that it calls for makes it almost inedible. I just season it with s & p. I make it for 2 people and there is just the right amount of sauce. I would definitely double the recipe for four people.

Classic Bran Muffins

These are really good and moist, just like what you would get in a bakery. I left out the raisins for personal preference and was making these once a week for a while!

JIF® Irresistible Peanut Butter Cookies

These were good, but not great. I did add chocolate chips and roll the cookies in sugar before baking which made them a little better, but I didn't find the cookies to be very flavorful. You could hardly taste the peanut butter. They did turn out thick with a very nice consistency, but I think I will go back to my old recipe.

Baked Dijon Salmon

I made this with grainy country style dijon and it came out great. Be sure to watch the cooking time based on the size of your fillets as mine took a little under 15 mins to cook. This was so quick and so easy and the best part is that there is no clean up!

Cajun Seafood Pasta

This was good, but not great and definitely not worth all the calories. I probably wouldn't make this again any time soon, but I would suggest cutting down on the parsley and adding a little extra basil and substituting some extra parmesan for some of the swiss.

This was very easy and good, but took about 10 minutes longer than expected to cook. My fillets were pretty thick, but next time I think i'll try it with tilapia.

These are very quick to make and are really good. Next time I think I will try with peanut butter chips instead of butterscotch. Mine took about 10 minutes less than stated to cook.

Shrimp Scampi Bake

I don't know what happened, but I thought this tasted like nothing. I even doubled the garlic and lemon and added crushed red pepper and dried basil and it still had no flavor. I cut down on the butter and there was still a pool at the bottom of my bowl when I was done. I'll stick with my other shrimp recipes!

Mexican Tinga

This was so easy and so good. I used mexican style stewed tomatoes and only 1/4 of the can of peppers. I also topped this with mexican sour cream and queso fresco.
