This may be my new favorite cookie. These were delicous...so much so that I probably need to make another batch before Christmas. A couple of things, though, just to warn people. I did not get anywhere near 6 dozen cookies with this recipe. My cookies were not large at all, but the recipe still only yielded about 3.5 dozen for me. Also, I had chilled this dough before working with it, and I actually had to let it sit out for a bit and soften to be able to roll it. I made some of the cookies with strawberry jam and some with citron jam (yuzu fruit spread from Trader Joes) and both were wonderful!
Edited to add: I made these a second time, with lemon curd for the filling. Wonderful! I think in the future, I"ll make half of the cookies raspberry and half lemon. They were great!
