RamJam Chicken

This was amazing! I only marinated for about the 3 hour minimum and still it had lots of flavor. I grilled slowly to make sure it didn't dry out by overcooking. Super easy and one I'll be using a lot this summer.

Rosemary Roasted Turkey

super easy! prepared the marinade the night before and stuck in the oven as directed with a meat thermometer it was a perfect Christmas Eve dinner. I stuck it in the oven on the way out to church and it was almost ready when I got back. PERFECT

Roast Leg of Lamb with Rosemary

Fantastic! Was a perfect Christmas eve meal and made for a couple of days of delicious leftovers. I used an electronic meat thermometer to ensure a perfect, slightly pink center.

Bessy's Zesty Grilled Garlic-Herb Chicken

Super easy and so, so tasty. I did cut out the white sugar, used 1/4 cup of Splenda and a full tablespoon of honey. I skipped the saffron; didn't have any and don't think it has much flavor anyway.

Goat Cheese and Arugula over Penne

I loved this! Super easy; knowing the high nutrient content of arugula have been looking for a recipe that my (young adult) son would enjoy. A previous recipe using it wasn't a bit hit but both my husband and son liked this very much. I used fresh from the garden, grape tomatoes instead of cherry and didn't exactly measure the salt, pepper and garlic... but used about the recommended. My son did say he would like it better if it had more moisture, so I suggested he ad a sprinkle of flavored vinegar which he did and liked better. I liked it as is.

Fabulous and super quick and easy. I will admit, I added about two tablespoons of orange liqueur to the liquid measure but I'm sure it would be delicious either way. We served these over fresh crepes.

Cousin Cosmo's Greek Chicken

This was awesome! I probably used more pepper than salt in flour coating and used chicken broth instead of chicken bouillon; other than that no changes. I think next time I would like to add a little more flour to thicken up the broth and make some brown rice to serve it over because there was a lot of flavorful broth that got wasted.

Brown Rice and Black Bean Casserole

I really enjoyed this the first time I ate it, but oh does it improve with age. I ate the last leftover today, 2 days after it was made and boy was it good. My son ate a full plate of it last night and also seemed to enjoy it more the second go around.

Luscious Lima Bean Soup

since hubby has recently been laid off I'm looking for cheap nutritious meals. Loved this! Only thing I did differently was use 4 cups of veg broth/4 cups of water instead of the bouillon. That said, at the end I decided to add a generous sprinkling of black pepper, Thyme and a light-handed sprinkle of salt. I'll see how it tastes for my lunch tomorrow.

I will say I used only 1 tsp of cayenne which my son and I thought was perfect; my husband and daughter felt it was too hot, so we will back down to about 3/4 tablespoons next time. I also placed whole unshucked ears of corn in microwave for 2 minutes before shaving kernels off.

The only thing I did differently was add some fresh crushed garlic. This keeps very well, is filling, healthy and economical as a side dish or main.
