Marinated Barbequed Vegetables

Cumin Turkey Burgers

OMG these were so good! Only a few minor changes; I did add an extra egg and used instant oatmeal instead of bread crumbs as they didn't seem like they were binding together well. I used jarred jalepeno slices as that was what I had on hand, and I cooked them in a pan sprayed with Pam and a drizzle of olive oil. My husband and I are going for a low fat/low carb diet so this fit perfectly!

Aunt Jules' Balsalmic Chicken with Peppers

I gave it four stars only because I adjusted ever so slightly, but 4 1/2 is probably closer. I didn't use spinach simply because it already had a lot of veggies in it. The other point I would make is to double the amount of sauce because it was so yummy! I happened to have a white balsamic with blueberry on hand. Normally I have the standard which is what I would have used but this was devine! I also used Splenda brown sugar blend instead of straight brown sugar.

Middle Eastern Turkey Dogs

These were so easy and so good! My husband and I are trying to eliminate simple carbs and cook with lower fat meats; I served these turkey dogs over spaghetti squash topped with marinara sauce. Yummy!!

Brazilian Fish Stew

As is, this would be "pepper" stew with some fish for flavoring. Agree with what the others say, 1-2 peppers at most. Other than that this is a very easy and tasty recipe. I like peppers and used one red and one yellow but think I'll probably go with just one whole pepper if I cook it again.

Chicken with Ginger Pesto

Way too salty and oily. As another member suggested, I think maybe it could be thinned out with some lemon juice and more green onions added. Less oil, less salt and maybe it would be good but then it wouldn't be the same recipe, which would be fine with me. I won't cook this again.

Roast Leg of Lamb with Rosemary

Fantastic! Was a perfect Christmas eve meal and made for a couple of days of delicious leftovers. I used an electronic meat thermometer to ensure a perfect, slightly pink center.

Rosemary Roasted Turkey

super easy! prepared the marinade the night before and stuck in the oven as directed with a meat thermometer it was a perfect Christmas Eve dinner. I stuck it in the oven on the way out to church and it was almost ready when I got back. PERFECT

White Turkey Chili

This was excellent and such a change of pace for the Thanksgiving left-over turkey. I had "Fire and Ice" white wine with jalepeno on hand. Yummy! I forgot to add the lime juice but it was awesome just the same.

Tarragon-Turkey Soup

This was so delicious! I was a little worried because I'm usually not crazy about tarragon. I only made it because I had some quick cook barley on hand that I wanted to use up. Wow! the flavors mingled beautifully without any overpowering flavor of tarragon that I have disliked in the past.

Flat Iron Steak with Three Pepper Rub

I doubled the recipe and made it twice over a couple of weeks. I rubbed it into the meat early in the day and let kept it in the fridge several hours before cooking. The only problem was that I should have cooked more so my family wouldn't fight over the last bits of meat. What an easy way to dress up an inexpensive cut of meat.

Grilled Caribbean Chicken Breasts

I would say be absolutely sure you have time to marinade this for a lengthy period of time as it was fairly bland. BUT... I also didn't have fresh oregano or ginger on hand; I used a generous amt of ginger powder and about the same amt of dried oregano as called for fresh. It did have a really nice mild flavor and was very moist as cooked on my George Forman grill. I served it with black beans and rice and Okra, Corn and Tomatoes (by TXgirl)from this site. Great home-cooked meal!

Okra, Corn and Tomatoes

I really liked this recipe. It was a perfect to use up some okra and also another good use for file powder, which is not used in that many recipes and so hard to find in my town I had to get some in New Orleans. I can tell the file powder is really what made it special though, so try not to skip this.

Brown Sugar Meatloaf

I had panko crumbs to use up instead of crackers. Also, I was out of brown sugar so used a little turbinado sugar with a drizzle of molasses. My family was in need of some comfort food, one kid had actually asked for meatloaf. This recipe was the best I've tried.

Chicken Pasta - Shannon Style

This was excellent! I did make some, minor changes. We are usually trying to cut back on carbs and fat thus I wanted to avoid the breaded coating and frying. I used boneless chicken breasts that had been marinating two days in Good Season's Italian salad dressing mix. I cut in small pieces and sauteed in a little olive oil until cooked through. I also used a lower carb, high protein pasta, Barilla. They didn't have bow ties so I used rotini. We all loved this and though I had increased the amount served to 8 for my family of 5 and a guest, there wasn't a bit left.
