White Cheese Chicken Lasagna

Because I liked the ingredients in this recipe, I decided to give it a try, but modified it to make it easier to make. This is what I did and it turned out great: Instead of lasagna noodles, I used a lb. of rotini. (I HATE cooking lasagna noodles, don't ask me why). I cooked the pasta while the chicken was boiling. I used 4 boneless skinless chicken breasts and chopped them up when they were done boiling. At the same time the pasta and chicken were cooking, I defrosted the spinach in the microwave and pressed all the moisture out of it. I mixed the chicken, pasta, and spinach all together in the pasta pot after I drained off the pasta. I seasoned it with the oregano, a little basil, salt, and pepper. I made the cheese sauce as directed and added a little nutmeg to the sauce when it was done. If you have one of those little choppers, I highly recommend using it to finely mince your onions and garlic. Then, I added two eggs to the ricotta cheese along with a little bit of parmesan cheese, about 1/4 cup. To assemble this recipe, I layered pasta mixture, ricotta, and cheese sauce in that order ending up with cheese sauce. I then covered the top with mozzarella cheese and sprinkled on a bit of parmesan, popped it into the oven and baked it for 35 minutes. This way is much easier for my kiddos to eat and I feel the ingredients blend together better this way. It all fit very nicely in a 9x13 pan. We will definately be making this again. Seven Layer Tortilla Pie

VERY GOOD! I like the fact that this is a meatless recipe. The flavors were great. We prepared this exactly as written and the proportions came out perfectly. Didn't have anything left over when we were done assembling the pie. We will be having this again.

Taqueria Style Tacos - Carne Asada

Excellent Excellent Excellent!!! We prepared these as written except we omitted the sauce portion of the recipe and just used fresh salsa from the veggie section of our market. They were VERY GOOD! If you love traditional mexican as much as we do, then I highly recommend you try these. The sauce just seemed to be too time consuming to do, but might try it when we have some extra time on a weekend.

Fried Rice Restaurant Style

Although this recipe doesn't taste much like the fried rice that I've ever had, I make this recipe quite often. My 2 year old son LOVES it, so I make a batch and we eat it for lunch. The leftovers reheat well! The only change that I made is to use a little over a cup of frozen peas and carrots. This is a recipe that we will use often. It is great with Teriyaki Chops, which is another recipe from this site.

Oaxacan Tacos

WOW WOW WOW!!!! These are absolutely the BEST THING I HAVE MADE FROM THIS SITE! If you are into "Americanized" mexican food, then these tacos aren't for you. However, if you love traditional mexican, then you MUST TRY these! My entire family can't get them out of their head. We have had them 3 times in 8 days. The flavors are simple but come together to make an incredible authentic tasting taco. LOVE THESE! We prepared the recipe exactly as written. I highly recommend you try them.

Shredded Beef Enchiladas

The only reason that I'm giving them two stars instead of one is because the meat portion of this recipe is very tasty. I do not recommend this recipe as written, but the beef would be great in tacos. I think that I will try that next time. This recipe makes WAY TOO MUCH CHEESE SAUCE! The taste of the chiles is overwhelming!

Terry's Texas Pinto Beans

I really don't like to leave one star reviews, but there was just no way around it with this one. While it was cooking the aroma was just AWFUL! But, I went ahead and gave it a shot. In all honesty, the taste was worse than the smell. They were SO BLAND! ....plain, plain, plain! I really can't say anything good about this recipe. I have removed it from my recipe box and will not be having it again.

Barbie's Tuna Salad

I searched for a tuna salad recipe that was a little different from the norm. I doubled this recipe and found that the taste was just ok, but easily modified to be GREAT! First of all, I would cut down on the amount of relish and parsley and add a little more cheese. I used fresh onion since I don't keep minced dried onion in the house. It took about 2 Tbl of the onion to make it "show up" in the taste of this recipe. That's 2T total for this recipe DOUBLED. I know I will make this again, but with a few little tweaks that I mentioned. Also, don't be afraid of the curry. It is excellent in this dish!

Chilie Pork Tacos

Delicious alternative to regular tacos. We had some ground pork we needed to use, so I searched this site and found this recipe. I was a little skeptical because of the vinegar, but this recipe turned out FABULOUS! The Salsa Verde *makes* the tacos, be sure to use it. This one's already in our recipe box to use again and again! Thanks for a great twist on TACO NIGHT! :)

BBQ Pork for Sandwiches

WOW!!! This recipe is FANTASTIC! My husband prepared it with a little direction from me. You have to understand that he does *not* cook. ;) It was just the best BBQ that we have ever tasted....and that includes the BBQ we ate in Memphis that, until making this recipe, was our favorite. We made the recipe using 5 lbs. of boneless pork loin which was on sale for $1.89 per pound at our market. We just put that in the crock pot with two cans of beef stock and let it cook for about 6 hours on high. Then, we removed all visible fat and shredded the meat. (The meat was SUPER easy to shred.) We then put it in the oven as stated in the recipe. We used Sweet Baby Ray's original sauce as recommended by many other reviewers. It came out absolutely PERFECT! We will be making this again and again and definately will use it when whole, boneless pork loins are on sale! Tons of awesome food for very little money! Thanks for a GREAT recipe!
