Make Ahead French Toast

My husband, 3 year old and I thought this was great. I modified the recipe a bit. Here's what I did. I made a loaf of pillsbury refrigerated french loaf, let it cool and sliced it into slightly more than 1" slices. I sprayed a glass 9x13 pan with Pam. I added cinnamon to the batter. I gave each slice a long dip in the batter on each side and placed it in the pan. I poured more batter over each slice and put a little in the bottom of the pan--enough to coat the entire bottom of the pan. In the morning, all the batter had been soaked up. I flipped each piece and poured the topping over it. I left the pecans out of the topping and cut the sugar in half. I baked it for 37 min and broiled it on high for the last 3 min or so (you have to watch it to make sure it doesn't burn.) I still had enough batter to make at least one more pan full--maybe I'll do that next time. It was delicious--it wasn't soggy and didn't stick to the pan. Thanks for the recipe.

Best Ever Banana Bread

This is the best banana bread I've ever made. I made a few minor changes: I used 4 bananas instead of 3, added 1 tsp vanilla, added 1 tsp cinnamon and subbed 1/2c of the white sugar for 1/2c brown sugar. It is amazing. My husband and 2 year old both ate 3 pieces for breakfast. Thanks for the great recipe!

Jam Filled Butter Cookies

These were delicious, easy to make cookies. I added 1/2t of cinnamon and a few grinds of sea salt to the batter. Yum. I used smuckers red raspberry spreadable fruit and used about 1/4t per cookie. As others suggested, I replaced the 2 egg yolks with one whole egg. It took the full 10 min in a gas oven. I'll definitely make these again. Thanks for the recipe!

Beef Tips and Noodles

This is a delicious, easy recipe that my family loved. I modified it slightly by chopping up half a small onion and browning it in butter and then brown the sirloin pieces with the onion before putting it in the oven. I also used a can full of milk (non-fat) instead of the water and added about half a cup of pinot noir. It was amazing. My husband and boys (7yrs & 3yrs) gobbled it up. I served it over buttered egg noodles and had plenty of sauce/gravy. Thanks for the great recipe. I will make this again!

Banana Cake VI

Amazing cake. Love, love, love it. I followed the recipe exactly, but it took about 1hr, 20 min to bake. I also reduced the powdered sugar in the frosting to 2.5 cups. Will definitely make again. Thanks for the great recipe!

Sausage Gravy I

My husband, 5 yr old and 2 yr old loved this recipe. The only change I made was to use 1 lb sage sausage with 1/2 lb plain ground sausage and increased the other ingredients to match 1 1/2 lbs of pork. I also subbed butter for the bacon grease. A delicious, easy meal--especially if you use refrigerated biscuits. Thanks for the recipe!

Love this recipe! I only made minor modifications--I used all chicken stock instead of water and subbed cannelloni beans for the green beans. I added a little more spinach than it called for and I put 1 c of uncooked pasta right into the soup. It is delicious! My kids love it too. Thanks for the great recipe

Janet's Rich Banana Bread

This is a great recipe. I made it into muffins (batter made 15 muffins) and baked them for 24 min as others suggested. I also mashed the bananas (used 3, instead of 2) and added 1 t of cinnamon and a dash of nutmeg. The muffins are flavorful and light and fluffy--that surprised me most. When I think of banana bread, I think of dense, moist and heavy. If that's what you are looking for, this is not the recipe for you. If you want your muffins/bread delicious and fluffy, make this recipe.

World's Best Lasagna

Delicious, even with my huge mistake. I added 1T of pepper instead of 1/4t. So, ours is very peppery, but still delicious. I added an extra T of chopped fresh basil and about 1/4c Cabernet and reduced the water by he same amount. Can't wait to make this again with the correct amount of pepper :)

After-Thanksgiving Turkey Soup

Fantastic turkey soup recipe. If you like Byerly's wild rice turkey soup--this is a close second if you add slivered almonds to the recipe. I would also suggest reducing the number of onions to 1 1/2 or 2 at the most and adding some garlic. Yum. My father, husband and two year old son all loved it.

Scrumptious Salisbury Steak in Mushroom Gravy

This was a great recipe. I made a couple changes to the steak and to the gravy. I added worcestershire sauce to the patties and replaced the 2 T onion with the same amount of dried minced onion. I didn't have poultry seasoning on hand, so to replace it, I added a bit of sage, thyme and marjoram. For the gravy, I added an extra teaspoon of beef boullion granules and a can of cream of mushroom soup--as you can imagine, I had to add a bit more milk to thin the gravy. My husband and two year old both loved this recipe--we will definitely make it again.

Lasagne Verdi al Forno

I LOVE the bechamel sauce in this lasagna. I used store bought boil noodles and skipped the chicken livers. The lasagna has a very interesting flavor--like no other lasagna I've had. My husband really enjoyed it. Next time, I would use store bought sauce instead of tomato paste and beef stock. The bechamel sauce is what really makes this lasagna.

Chicken Noodle Casserole I

Delicious!! Even better on the second day. I made minor tweaks--added a T of thyme and raw garlic to the water for poaching the chicken/cooking the noodles. I also used half the butter and increased the crackers to 1 1//2 cups as someone else suggested. I used chicken and herbs condensed soup, healthy cream of mushroom and light sour cream (slightly less than one cup.) I also added a small can of drained mushrooms. I will definitely make this one again. Thanks for the great recipe.

Couscous Salad with Dried Cherries

This recipe was very good and everyone in my family liked it, but it isn't quite a 5 star dish in my opinion. Maybe my balsamic vinegar is a little off, but the flavor was slightly off. That being said, I will make this again, but try using a different balsamic or perhaps a little less.

Pesto Chicken Florentine

This was delicious! My husband and two boys (7yr & 3yr) loved it too. I tweaked it--I added more spinach and sauteed chopped onion with the garlic and added mushrooms when the chicken was almost done cooking. Yum! Next time, I'll add more garlic and even more spinach and mushrooms. I used the dry alfredo seasoning packet to make the sauce and bought a slightly more expensive pesto...well worth it. Thanks for the great recipe!

Bolognese Sauce

I thought this was a great recipe. Next time I think I'll add some parmesan. It was a bit on the acidic side, but still very delicious. I also browned the bacon first, then cooked the onion, carrot and celery in the bacon grease. Then added the meat and garlic and followed the recipe. I also substituted crushed tomatoes, b/c my husband doesn't like chunks of tomato in his sauce. My 11 month old couldn't eat this fast enough. My husband and 4 year old liked it too. I really liked the subtle wine flavor. I'm sure it will taste even better on day 2...

Acorn Squash Soup

This is a great recipe. My husband and two boys (6 & 3yrs old) really liked it. I'm not sure my kids would have even tried it if the bacon wasn't crumbled on top--they were glad they tried it! I made a few tweaks--added a bit more broth so it wasn't so thick, used fat-free half and half to make it a bit healthier and upped the curry powder by another 1/4t. Yummm. The consistency wasn't perfect--just a tiny bit gritty gritty, which is why I didn't give it 5 stars, but I will still make this again. It may have been something on my end. Also, to cook the acorn squash, I cut it in half, removed the seeds and placed each half face down in a 9x13 dish with about an inch of water. I baked it at 350 for about 45 min. Delicious Chicken Casserole

This casserole is pretty good. It's not fantastic, but it is good. I added an extra cup of rice and subbed a can of cream of celery soup for one of the cans of cream of chicken. I also omitted the butter from the crackers--it isn't needed. I added one cup of shredded cheddar. I'm glad I did--it adds a bit of extra flavor. It's a bit on the bland side, but still good. I hope my kids like it as much as I do.

Buttery Herb Wine Sauce

I thought this was pretty good. I made a few changes. First, I doubled the recipe and added 2t of minced jar garlic to the butter and sauteed flour-dusted chicken in the butter before the mushrooms (I used fresh.) I left out the egg. I had to add a bit of 1% milk at the end b/c it was too thick. I could have added more milk, it still seemed a bit thick, but the flavor was great. My guests (4 adults and 3 kids under age 7) really liked it. Thanks for a great recipe.
