Island Kielbasa in a Slow Cooker

This recipe was a hit at our last potluck! I doubled it and added onions and green pepper as others suggested; also reduced the brown sugar and it was still plenty sweet.

The Best Veggie Sandwich

Apple Almond Crunch Salad

Delightful blend of flavors! Instead of mixing the whole recipe in a serving bowl, I layered the ingredients on individual salad plates. Very easy and no soggy leftovers. Also added a few fresh raspberries.

White Chocolate Raspberry Cheesecake

I substituted seedless raspberry jam as others suggested. Also used the water bath method to bake. Browned evenly without cracking. Very rich and creamy. It was a hit.

Delicious cookies! I chilled the dough to make it easier to handle, then rolled it into small balls and flattened with the bottom of a glass dipped in sugar.

Chicken Cacciatore

We added sauteed mushrooms and used 3 colors of sweet peppers. We substituted fresh garlic and added extra Italian seasoning. Also, added some red wine. Much easier than other chicken cacciatore recipes we've tried, and more flavorful. The boneless, skinless chicken breasts were much easier to use than a cut-up chicken and made it easier to serve. Will use this one again.

Pumpkin Swirl Bread

I doubled the recipe but only used 1 egg in the cream chz mixture. It made 2 beautiful, large loaves. The cream chz swirled beautifully. Lots of compliments! I left it in the pans overnight and loaves stayed intact when I removed and sliced them.

Loved this one. Attractive presentation. Easy to plate individually ahead of serving time and keep chilled in frig. I increased the balsamic vinegar to my taste.

Grilled Steak Pinwheels

Turned out just as I was hoping it would! A bit put-zy to assemble, but a wonderful success, both in flavor and presentation, for a special dinner with friends. We secured each with a toothpick soaked in water and grilled them on foil in case they fell apart, but they held together well.

Pumpkin Black Bean Soup

I followed others' suggestions and doubled the pumpkin, but only used 2 cans of beans (1 pureed, 1 whole). Also used cider vinegar. Next time will use less vinegar or try red wine instead.
