I swear, this is the best dish-- my husband screams for this. I make almost the exact recipe but I add chopped onion, a little hot cayenne pepper powder, use chicken broth or bullion cubes with the water, and I always add frozen meatballs to make it a hearty winter meal.

Country House Bed and Breakfast Casserole

Great Recipe can be adjusted to what you have around. I made it with leftover steak and did not let it sit overnight, but only for about 20 minutes - and it turned out fab.

Bacon Ranch Pasta Salad

Saving this one!! You can definitely change it to your taste, but my bet is the dry ranch powder is the key to this yummy salad, everyone loved it. What I did different was add a bit of whole grain mustard, chopped up spinach greens, used mini-bow ties to turn into a type of blt pasta salad.

Potato Chip Cookies VI

Southern Fried Chicken

I only fried breasts of the chicken in a cast iron skillet with canola oil, letting it heat up for a long time, I think this is key. As suggested I did do the 20 min ice water brine, also added a bit more spice to the flour and on the chicken. I fried the breasts about 30 minutes, flipping every 7 to 10 minutes. Turned out crispy and brown on outside, juicy on inside.

Broiled Tilapia Parmesan

With over a 5500 great reviews, I am a little late to the party, but this fish is fantastic! I sprinkled a little breadcrumbs and parsley over the top before the final broil to make it more aesthetically pleasing, everyone loved "my" fish! Thanks.

Chocolate Cornstarch Pudding

Made it exactly as stated and it is really nice, I was a little worried because I've never used cornstarch in this manner and it really tastes just as good as boxed instant or cook and serve pudding and you know exactly whats in it.

Buttermilk Pie

It really is a delicious pie, I made it exactly - lemon, vanilla & sprinkled with nutmeg before baking, the three flavorings together just make it so yum. I made homemade lard pie crust which puts it over the top decadent.

Chocolate Eclair Cake

Everyone loved this. So easy, but next time & may follow someone else advice and make a homemade ganache frosting for the top, instead of the pre-made frosting which to me is kind of yucky to begin with. Otherwise, this recipe is a keeper.

Ranch Dressing II

Why would anyone buy ranch when it tastes so much better making it like this. I am glad it doesn't have buttermilk b/c I usually don't have any around, all other ingredients I do. I like to dip everything in this ranch, like truly everything.

Cottage Cheese Chicken Enchiladas

I have made this 3 times, it turned out great 2 of those times & meh once. This is the kind of recipe that you can vary to your tastes. I chopped leftover chicken, added it to a saute of red pepper & onion, the cottage cheese, cumin, garlic, sri-racha sauce. Rolled in flour tortillas, & topped w/ the 10 Minute Enchilada Sauce found on this site (which is awesome~), and shredded colby. Bake a good long time to melt the cottage cheese properly & a good dose of red sauce soften the tortillas really nicely.

Dried Cherry Cake

I really am a better cook than a baker, BUT this cake turned out very good and was very easy. I had the dried cherries, but no nuts, so I made it w/ greek yogurt, bumped up the cherries to 1 cup, and drizzled a little glaze over the top (powdered sugar, water & almond extract) and it turned out fabulous.

really good dough, because I thought I screwed it up & it still came out super-duper flaky. I did use a food processor for the dough & let it rest for 2 hours. I filled the rugalach with a processed paste of: roasted almond, cocoa, prunes, raisins, orange zest & a little agave nectar.

Kentucky Butter Cake

I did not put the butter sauce on it/in it... I opted to use it for strawberry shortcake instead. I cut fresh berries and sprinkled w/ sugar to make a syrup & had it over the cake... I think it was delicious texture. I even think this cake would withstand a milky syrup like w/ tres leches cake.
