About this Cook
A momma of an 18 month old, doesnt leave me a lot of time to cook, so between my husband and me we try to come up with interesting recipes that dont take a lot of work or steps can be done ahead of time.
My favorite things to cook
I love coming up with healthy one pot meals. One of my favorites is an adaptation on Rachel Ray's Butternut Squash Risotto where we add pureed cooked spinach and bacon bits. it adds another level of flavor and vegetables to an already pretty healthy meal.
My favorite family cooking traditions
I have adapted my parents recipes for both filipino egg rolls that my mother learned from neighbors when my dad was in the navy to me and my husbands tastes and have shared them with a great many people over the years. And i love my mothers beef stew recipe, i have taken it and added to it by using sweet potatoes in place of white potatoes, and adding barley one of my husbands favorites.
My cooking tragedies
Im not very good with cooking whole chickens. they just never cook as quickly as the directions tell me they should and my thermometers lie. cutting into a half uncooked chicken is kind of gross.

Bar Chicks - Blackened Chicken Sliders
I may be biased as this was my recipe, but I love it. Yes, it can be a very spicy seasoning rub, but you can put as little or as much as youd like or use something different to suit your tastes as others have done. I am so glad so many people are enjoying this recipe!

Marinated Wild Salmon
My husband used granulated garlic instead and increaseed the green onion then cooked it in grill non stick reynolds wrap. he said it was delicious.

Chicken Pot Pie IX
This was the first time I have ever made chicken pot pie, and it came out pretty darn well! I cooked the veggies and chicken in the broth instead of water and added a little port wine to the gravy and sauted up some garlic in the butter and removed before making the gravy, but thats all I changed and it was yummy!
