Best Peanut Butter Cookies Ever
Best recipe for peanut butter cookies. I made with 1 cup brown sugar, 1/2 cup white sugar, used natural peanut butter. They have a wonderful texture. Took to a meeting, they were a hit. I could smell the PB fragrance through the container!!

Caramel Macchiato Cheesecake
Since I used an 8 1/2 inch springform pan, I changed the crust to 1-1/4 cups graham cracker crumbs, 1/4 cup granulated sugar, 1/4 cup softened butter, 1/4 teaspoon each nutmeg & cinnamon. After the cheesecake was refrigerated, I added about 1/2 cup finely chopped & toasted pecans to the top & left off the caramel, since friends were anxious to eat. Following the advice previously given, got espresso from Starbucks. Everyone loved. Wonderful flavor.

Breaded Rib Roast
I made this roast for Christmas, and it was excellent! I followed the recipe but used (for a 4 pound roast) 3 cloves of garlic, 1 teaspoon good black pepper, pecorino romano cheese and only 1/2 cup Italian seasoned bread crumbs. Also, took roast out of fridge for 2 hrs., so it went into the oven at room temp. I cooked for 3 hrs., let it rest before eating. It was slightly pink in the center. Will definitely make again.
