Supergirl Summer Smoothie

My 9 year old daughter loved this smoothie. We used everything except the papaya. I prepped all the fruit before hand and have it stored in gladware in the fridge so it's very simple to whip this up before school. Very satisfying and filling.

Low-Fat Blueberry Bran Muffins

I made these last night following the recipe exactly. They came out fantastic. I've never liked bran muffins but I want to try eating better. These muffins by no means taste as if they are low fat. My kids, even my picky eater, had 1 for dessert last night, 2 for breakfast and took another for snack time at school. My advice: double the recipe or they'll be gone in a flash!

Peanut Butter Cup Cookies

I used to make a very similar cookie using sugar cookie dough. When I saw this recipe I just had to try it and Wow! is it fantastic!! Super easy to make and unbelievably delicious!

Delicious Ham and Potato Soup

I have made this soup several times and tonight I won a soup cook off with it. I made a few changes- I put a leftover bone in ham roast into a stockpot and covered it with chicken stock. As I diced the onions and celery, I tossed the scraps into the broth for added flavor. I simmered it for about half and hour then removed the ham to cool and strained the broth to use later in the recipe. I cooked 3 sliced of bacon to use the drippings. I added the onions and celery to the pan and sautéd for 3-4 minutes. I added the potatoes and reserved stock along with the ham- I added an extra half a cup. I also added 2T of chicken base and fresh cracked pepper. After making the roux, I used half n half instead of milk and added 1 cup of sharp cheddar cheese. (I used Cabot's Seriously Sharp) I doubled the recipe and it was enough to fill a large crockpot for the soup cook off and it was gone in a little over an hour. It was a HUGE hit and my son was so disappointed that there was none left to bring home that I made another batch this evening. Excellent recipe!!!

Caramel Popcorn

As suggested by other reviewers, I make double the amount of caramel. The first time I made this was for my daughters Twilight themed birthday party so I added red Wilton food coloring to make "bloody" popcorn. I made the normal recipe for a bake sale a few weeks ago and everyone was asking for the recipe. This is a fabulous recipe!!

Banana Muffins II

I made a low fat/low cal version. I double the recipe and used 1 cup homemade applesauce in place of the butter and substituted Splenda for the sugar. I added 2t each of vanilla and cinnamon. They are so yummy. I totalled the nutrition info and each muffin has 89 calories and only .6 grams of fat which is fantastic for a great muffin.

Easy Sugar Cookies

My dough came out a little crumbly as other reviewers mentioned. I just pressed it all together and wrapped it in saran wrap in the fridge. Then I scooped it out and rolled half in red sugar crystals and the other half in green sugar crystals. They came out perfect! Crispy on the edges and soft and chewy middles. YUM! Next time I will make sure to cream the butter better as other reviewers mentioned. Wish I had read the reviews first, LOL But either way, these cookies were great!

Orange Smoothie

My kids and i love this recipe. I used Splenda to taste and doubled the vanilla. It tastes like a creamcicle. Easy to make for the kids before school and Yummy enough to make extra for Mommy!

Fancy Chicken Salad

I made this chicken salad last night. As I was making the dressing, I added the dill as I chopped it. After 2T, it seemed like there was a lot of dill, so I tasted it. To me, it overpowered everything else. I shredded up some more chicken and made more dressing (without the dill) to combine it all and cut down on the dill flavor. Personally, I think 1/2T of dill would have been plenty. Other than that, I loved the different take on chicken salad, even my finicky son likes it! I will definitely be making this again, just cutting way down on the dill.

Big Soft Ginger Cookies

The only change I made was using an equal amount of butter instead of margarine. I used a small cookie scoop and placed them right into the sugar, rolled it and placed it on the cookie sheet. Then I used a glass to flatten the cookie slightly. REALLY yummy cookies! Even my kids who hate gingerbread cookies, gobbled these up!

Stuffed Strawberries

I made these tonight for a small party and they were gobbled up. I tweaked them to make them healthier. I used fat free cream cheese, Splenda and vanilla and they came out great! I also prepared the berries differently. I cored them and filled the open cavity with the cream cheese mixture. Thanks for the inspiration! I will be making these many, many more times.

Cranberry Sauce Chicken I

I made this recipe using fat free French dressing and skipped the sugar. I mixed the sauce in the crockpot then added the chicken which I had cut up into tender size pieces. The chicken absorbed a lot of the flavor and the sauce was delicious on top of rice. Will definitely be making this one again.
