Chef John's Pavlova with Strawberries

Fancy Chicken Salad
I made this chicken salad last night. As I was making the dressing, I added the dill as I chopped it. After 2T, it seemed like there was a lot of dill, so I tasted it. To me, it overpowered everything else. I shredded up some more chicken and made more dressing (without the dill) to combine it all and cut down on the dill flavor. Personally, I think 1/2T of dill would have been plenty. Other than that, I loved the different take on chicken salad, even my finicky son likes it! I will definitely be making this again, just cutting way down on the dill.

Delicious Ham and Potato Soup
I have made this soup several times and tonight I won a soup cook off with it. I made a few changes- I put a leftover bone in ham roast into a stockpot and covered it with chicken stock. As I diced the onions and celery, I tossed the scraps into the broth for added flavor. I simmered it for about half and hour then removed the ham to cool and strained the broth to use later in the recipe. I cooked 3 sliced of bacon to use the drippings. I added the onions and celery to the pan and saut├ęd for 3-4 minutes. I added the potatoes and reserved stock along with the ham- I added an extra half a cup. I also added 2T of chicken base and fresh cracked pepper. After making the roux, I used half n half instead of milk and added 1 cup of sharp cheddar cheese. (I used Cabot's Seriously Sharp) I doubled the recipe and it was enough to fill a large crockpot for the soup cook off and it was gone in a little over an hour. It was a HUGE hit and my son was so disappointed that there was none left to bring home that I made another batch this evening. Excellent recipe!!!
