Calzone

I used this dough to make four generous calzones in the traditional semi-circle shape. Each was completely devoured! Go light on the pizza sauce (or leave it out and just use some for dipping) or it will tend to squish out the sides when you seal the dough. I used a variety of fillings according the to taste of the person who would be eating the calzone (mine was ham, genoa salami, pepperoni, mushrooms, pepper rings, and cheese. Delicious combo!) I cut three 1" vents in the top of the calzone before baking, plus I used the melted butter, a light sprinkling of pizza seasoning herbs, and a light sprinkle of freshly grated parmesan. Very good! I baked them the same way I bake pizza--on a pizza stone in a 450 degree over for 15 minutes. They were beautifully done, golden brown and not too doughy.

Chicken Enchiladas V

Awesome recipe! The only adjustment I made was to add a little sprinkle of cheese over the filling before rolling them up. My entire family liked this, even the picky eaters!

Caesar Salad Supreme

This recipe was awesome! I only made half the recipe, and I used anchovy paste instead of anchovies, but it turned out great. I just needed a quick salad dressing recipe; I didn't have time for homemade croutons. Next time I'll make sure to leave time to do the croutons too, and I'm sure it will be even better!

Asian Sugar Snap Pea Appetizer

WOW! These were absolutely delicious! I didn't have garlic infused oil so I faked it by pressing a clove of garlic into some olive oil. I also didn't have chili oil, but I used about a quarter teaspoon of tabasco and it worked great with on weirdness from the vinegar base in the hot sauce. I intended to use these as a side dish, but I kept "appetizing" on them and there weren't many left by the time the meal was served!

Big Soft Ginger Cookies

They baked up flat and not puffy like the picture, but the flavor was so fabulous that nobody cared. I rolled some of them in turbinado sugar instead of plain white sugar, and it only made them better, if possible!

Microwave Chocolate Pie

Very dark chocolate. Great flavor and easy to make, though I think I'd personally prefer the meringue to be a bit higher. My husband, who normally doesn't like chocolate pie, scraped his plate clean and wanted assurance there was going to be some left for later!

Rhubarb and Strawberry Pie

Excellent flavor, but very soupy a few hours after baking. I had to the thin liquid out of the cut pie! The flavor makes it worth making again, but I'll adjust the thickening agents next time.
