Chewy Crispy Coconut Cookies

By far the best cookie I have ever made!! Who thought such saisfying crunch could be found in such a chewey cookie! Even a friend said that she didn't like coconut, but she LOVED these!! I'm considering adding pecans or chopped walnuts next time. Awesome recipe!!

Breaded Chicken Fingers

YUMMMMMM... Nice garlicky flavor. Definitely a must with the Honey Mustard II recipe as suggested by other readers. You'll never want a fast food or store bought chicken strip again after you've had these!!

Wonderful flavor and good texture. Wonderful warm with a cold glass of milk, of course. My boyfriend requested I make these again! I didn't have ground cloves on hand, so I substituted allspice.

Hearty Chicken-Rice Soup

This is the kind of soup I want brought to me the next time I'm in bed, sick!!! So hearty, comforting and satisfying. I advise cooking your own chicken breasts in chicken broth for the most flavor. Serve with a loaf of soft bread and softened butter. Excellent meal! My boyfriend ate this soup as leftovers for three days until it disappeared! :)

This is the recipe I have been searching for!! Just like my mom used to make for us growing up, but she called them "Dutch Babies." Good plain, with just powdered sugar and butter. Mmmmmmmmm!!

Stuffed Shells I

Simply, ooey gooey cheesy goodness!! These were even better the next day after the cheeses had settled and firmed a little more. I recommend fresh shredded parmesan cheese and extra mozzarella. Serve with a garden salad with Italian dressing, and you have a meal better than you could buy at Olive Garden!!

Salisbury Steak

OH MY GOD, the topping is the best. Go easy on the ketchup, and heavy on the worstershire. The sauce can be used for any meat or steak. I will definately be keeping cans of condensed onion soup on hand from now on! The steak was great, it falls apart pretty easily, but still wonderful. Rave reviews all around!!

Quick Zesty Green Beans

I could not find OLD BAY Blackened seasoning, so I improvised and added some minced garlic instead. The pecans gave some good flavor and crunch. Excellent idea. Extra pecans don't hurt either. The extra pecans were used as salad topping for added flavor and crunch.

Charley's Slow Cooker Mexican Style Meat

WOW. All I can say: Wow. Get ready for melt-in-your-mouth goodness. I added a 2T of minced garlic, and 1T of dried, crushed Ancho Chiles. Booming with flavor!!! Great for use with the recipe for "Beef Tamales" (also found on this site) but would be great wrapped up in a soft tortilla!!

Beef Tamales

Thanks to "Redneckwoman", I improvised my meat to include all the fixings from her recommended recipe! Rave reviews on the meat. Excellent idea! I also used vegetable shortening instead of lard, but it does make for a "softer" tamale, which does not firm much even after refridgeration. I had enough masa afterwards, that I experimented and made Jalapeno Cheddar tamales for some of our vegetarian friends. Yummmmm. Tip: Less Masa, more filling. :)

Easy Mexican Casserole

Not bad, but nachos are better. Very bland. I added lots of seasoning, 1/2 lb of frozen corn to meat mixture and fresh salsa on top. Not crazy about the warm tomato topping. And definately didn't agree with baked sour cream, so waited to put that on at the end, cold. Don't be afraid to get creative with this one to give it that boost! It has lots of potential.

Russian Tea Cakes I

Fabulous, melt in your mouth goodness!!! I defeated crumbly mixture by letting the butter soften for several hours before I began creaming it. I also stired the misture a little longer with a fork. At first I was afraid it was going to be a disaster based on others reviews, but have no fear, the dough does materialize and blend beautifully. Stirring a little longer helps too. Excellent choice with the walnuts, and I even left the powdered sugar off half the batch. STILL YUMMY!!!
