Carol's Arroz Con Pollo

Made this vegetarian by using Quorn tenders in place of chicken and vegetable broth. Cooked everything in one skillet per review. Also used one can of green chilis in place of bell peppers b/c we didn't have any on hand. It was hot and spicy (to me) just cooked. Husband loved it. I loved it cold the next day eaten w/ chips. Will make again. Thanks!

Lentil and Smoked Sausage Soup

Very good. Used Tofurky vegetarian sausage (which by the way is made w/ real food ingredients and not loaded w/ chemicals). Topped w/ parmesan cheese. Will make again. Thanks!

Stuffed Shells I

Very good. We cut the recipe in half for our family of three. Per recommendations we added thawed frozen spinach, and half ricotta and half cottage cheese. The store I went to only had large shells, not jumbo, so rather than stuffing the shells I layered sauce, shells, cheese mixture, and added mozzarella cheese to the top. The neighbor kid loved it too.

Easy Mexican Casserole

This was wonderful!!!! I made it vegetarian by using Quorn brand meat free grounds, and used a can of vegetarian chili in place of the beans. I also used corn tortillas on the bottom in place of chips based on a review, and low fat sour cream. I havled the recipe for our family of three. This would be great for a pot-luck or party. This recipe is a keeper!

Three-Cheese Spaghetti Bake

This was great. Quick, easy and very good. We will definetly have it again. Although, for our family of three, it was alot, and we will halve it next time.
