Butternut Squash Soup

4 out of 5 only because I made modifications... I roasted for 45 minutes. I also added into the mixture 1-8oz block of fat free cream cheese. I grilled chicken & apple sausages and threw those in as well. Spices used: Cinnamon, nutmeg, and curry. Also, added baby spinach at the end for a nice contrast in color - and swirled at the top of my bowl a little maple syrup. Oh. my this was heavenly. Will do again, but next time will add chopped apple as well.

Stephan's Broiled Salmon Pesto

This was very good - but I made a few modifications. I used the tomato based pesto and baked (not broiled) for 25 @375. I could imagine the caloric content of using regular pesto at even 1 cup! I used only 1/2 cup for 2.5lbs of salmon. Still very delicious. Topped it over "Salmon and Spinach Fettuccine" that is posted on this site. Magnifique!

Grilled Salmon Steaks with Savory Blueberry Sauce

The only reason why I did not rate this lower was because I did enjoy the color of the blueberries with the salmon. The taste was just "ok" - there are better, easier, and cheaper things to do with salmon that are 5-star quality.

Rosemary Braised Lamb Shanks

This was absolutely amazing but I used a 3.5 lb leg of lamb and skimmed off as much fat as I could. Braised the leg, then browned the veggies, and boiled the liquids (burgundy wine) before slow cooking it for 9 hours. I baked cornbread and put a square on the bottom of a bowl and topped with the slow-cook mixture and topped with baby peas. My boyfriend thought this was To.Die.For!!! Thanks so much for such a wonderfully tasting meal. Already a "keeper" recipe!

Chutney Baked Brie

This was soo easy to make, and such a hit at a party I made this for. Everyone was asking, "Who made this?!" I did not skimp on the curry and next time I'll use even more. Thanks for sharing such a wonderful recipe. LOVED IT!!

Salmon and Spinach Fettuccine

I wanted to impress a guy and made this...and he was beaming with delight at how great this was!!! He wasnt sure that he'd like capers but I do so I used them. He loved everything!!!! I followed the recipe exactly. To add a contrast in color I used spinach fettuccine, which complements the color of the salmon sauce mixture. And I actually used 3/4 pound of smoked salmon fresh from the market. Definately a keeper and I will make it again and again for a definate crowd pleaser that takes absolutely no time at all. GREAT RECIPE. THANK YOU SOOO MUCH!!!
