Beer Batter Waffles

THE BEST!!! I've been looking for the perfect waffle recipe for a long time - crispy on the outside & light and fluffy in the inside. I've tried a LOT of recipes and this was IT!! Love it. I subbed in AP flour with baking powder and salt for the self-rising. Turned out so well. Thank you so so much!!!

Banana Nut Yeast Bread

I was REALLY hoping that this would turn out well despite some of the other reviews commenting that this was lacking in taste. Sad to say, I have to agree. Great texture, but it really tastes as if something's missing. Though I don't have sweet tooth, maybe it needs more sugar? cinnamon? salt? vanilla? hmmm... But I would like to keep experimenting with this until it's more to my taste ... thanks!

Sesame Pasta Chicken Salad

This was good, made a few changes b/c of what I had/didn't have on hand ... only change I would make is that I would sprinkle in the sesame seeds separately instead of mixing in with the dressing so that I don't loose all the ones that get stuck inside my narrow salad dressing jar.

Speedy Homemade Salsa

So good & so fast! I was looking for a salsa recipe that I could make without lemon/lime juice since I didn't have any at home, so this was perfect. I just used 1 little yellow onion instead of 1/2 red + 1/2 yellow. I also didn't have cider vinegar, so I used red wine vinegar. This is better than some of the other recipes i've tried from this site.

Grandmother's Buttermilk Cornbread

This was good~ I took some of the other suggestions & subbed in skim milk+1 tablespoon of apple cider vinegar for the buttermilk/ 1/2 cup of whole wheat flour for the white flour (which did alter the color of the cornbread a bit) & reduced the sugar to 1/2 cup b/c I'm trying to cut back on sugar (but this does make it less sweet than maybe what you would get in a restaurant) ... i was worried when I mixed in the eggs & saw bits of it "cooking" even though the heat was off. But it was fine once it baked - it still rose pretty well & i didn't notice any "egginess" to the cornbread ... this does make a more cake-like cornbread ... so for those who prefer a crumblier/rustic texture should look for another recipe ...

Jen's Fresh and Spicy Salsa

I just made this. It's okay right now, but I made this ahead of time to blend the flavors before I serve it to guests tonight. WARNING - go easy on the hot sauce! I didn't even add the jalapenos and only 1 tablespoon of habanero Tabasco sauce & it's SUPER SPICY. Maybe it's the type of Tabasco that I used, but I LOVE super spicy food, but this was too much for eating with only chips, although it might be okay in a burrito.

Cream of Pumpkin Soup

Good! Especially after I took the advice of some of the other reviewers and added in some brown sugar & maple syrup. I might leave out the croutons next time. They weren't very popular, although the soup itself was.

Peppy's Pita Bread

Time-consuming, yes. But so very worth it. Where I live, it's hard to have buy healthy baked goods without the dough conditioners. This was great - I subbed half of the AP flour for whole wheat & 1/2 with bread flour cause that's what I had on hand. Without a bread machine, I proofed the yeast for 10 min with the water & sugar. Added the oil in before mixing it into the flour & salt. Kneaded for 8-10 minutes. Set out for about an hour before shaping into rounds. Great texture & flavor. The next time, I'll form into 10 rounds, as they were overly thick when I made eight 6-7" rounds

Hummus III

great hummus. I substituted an asian type of sesame paste for the tahini because that's what I had on hand. But I reduced it to 2 T because I thought the toasted sesame flavor could be stronger. A 15 oz can yields a little less than 2 cups of beans, so I just reduced everything by a little bit. And then I used reserved bean juice to get the right consistency. It definitely improved in flavor as it sat in the fridge for a couple hours. Perfect with Peppy's Pitas from this site!

Creamiest Rice Pudding

Good but it didn't go over well at the dinner party I took it to. Rice as a dessert doesn't seem to appeal to some palates. I didn't have any problems with it thickening up. Great, easy recipe but I don't think I'll be making this again.

Kabob Marinade

Flavorful! Reduced oil to 3/4 c, soy sauce to 1/2 c and marinated cubes of striploin overnight. I did use the Marinated Grilled Vegetables marinade for the vegetables on the skewers because I thought too much of same seasoning would be monotonous. The meat was fabulous - tender and flavorful. Will definitely be making this again.

Garden Fresh Tomato Soup

Great flavor. I used garlic cloves. I'll try to experiment with cloves in the future as well and see which I like better. I don't have a food mill and tried to blend it all in my blender. I was short on time, and put it in hot. I've learned to NEVER do that again, it just exploded out of the blender, creating a huge mess. Served it anyways, but everyone was limited to 1 small bowl because I lost some of the soup in the explosion. A bit chunky, but good flavor. Will give myself more time to cool it off and blend the soup in the future.

Kettle Corn

This was a tricky recipe for me - I made 3 batches, and none of them were good enough to serve to my friends. The sugar burned every time, even when I tried the different methods suggested. I'll try it again, but next time I'll keep shaking the pot over the burner.

Sun-Dried Tomato Pesto

Fantastic! Despite having to omit the red wine & Parmesan, the flavor was phenomenal. I like that this recipe uses "dry" sun-dried tomatoes instead of the oil-packed ones, because they're easier to keep on hand (& more economical). I added triple the amount of basil because I thought I would like more basil flavor in it. Had to also sub dried parsley for fresh. Still amazingly good stirred in with spaghetti, can't wait to try it with Parmesan!

Baked Pork Spring Rolls

Very good! I increased to 50 servings, reduced the amount of pork to 1/4th of the called for amount, added in 1 box of tofu instead, and omitted the cilantro because I didn't have any on hand. I took the suggestion of 1 reviewer, and added some 5-spice powder to the pork, doubled the oyster sauce, added a dash of salt & soy sauce. I didn't have a problem with dryness because i added the tofu. Only thing is that I ended up making only about 40 rolls because I ran out of filling. I'll add some extra veggies next time. Really yum!
