Would love some suggestions for Japanese Eggplant which are the long thin ones. I normally make an eggplant garbanzo bean hummus or Eggplant Parmesan which we all love but I have soo many eggplants coming on need some other ideas. Thanks! MORE

Things started to go really well. I still had some side affects from the tonsil radiation, but all in all, I was feeling so much better.
